How to make chocolate brownies in a skillet (without an oven!)
Is it possible to make chocolate brownies completely in a skillet, without using the oven? Yes, it is!
A viewer from the Philippines (hi, Mina!) requested that Just Eat Life TV and I team up to make desserts in a skillet, without using an oven. So Jen over at JEL decided to make pan-cookies, and I tackled the skillet brownie! Read how to do it, below!!

CHOCOLATE BROWNIES IN A SKILLET:
So this was a bit of an experiment for me--and a successful one, at that! The recipe I used as the backbone of this is slightly adapted from Ina Garten's recipe (I use a bit more chocolate--go figure--and she puts hers in the oven...I don't use the oven at all).
Ingredients:
-1 stick of unsalted butter
-half a bag of chocolate chips/chunks (around 6 ounces), reserving a handful to add later
-half a bar of unsweetened chocolate (around 3 ounces), roughly chopped
-2 eggs
-2 teaspoons vanilla extract
-1/2 cup sugar
-1/4 cup all-purpose flour
-1 teaspoon baking powder
-1/4 teaspoon salt
-2 teaspoons instant coffee granules (optional)
Directions:
In a bowl, stir together together the eggs, coffee, vanilla and sugar. Then in a separate bowl, stir together the flour, the baking powder and salt. Have each of these bowls ready to dump into the skillet when it's time for them...
Put a skillet (a very seasoned cast-iron skillet is best) on medium high heat on the stovetop and add the butter, chocolate chips, and unsweetened chocolate. Stir until it's all melted.
Lower to heat. Add the egg mixture, stir, then add the flour mixture and stir again. Finally, add in that reserve handful of chocolate chips.
Cover and cook for 5-8 minutes, until the top looks cooked through. Take it off the heat and let cool for a few minutes so you don't burn your tongue...then dig in! My favorite way to eat this is with a side of ice cream :)

If you're looking for an indulgent, fudgy brownie that is extremely flavorful and not cloyingly sweet, this recipe is it! Literally one of the best brownies I've ever had! With that beautiful shiny crinkled top (which took me a while to figure out ????), and gooey, rich interior, this will be your new favourite brownie recipe!
INGREDIENTS:
- ¾ cup (105 g) dark chocolate - I use 50% dark chocolate, semi-sweet chocolate chips okay too
- ¾ cup (90 g) flour - regular, all purpose
- ½ tsp salt
- ½ cup (113 g) unsalted butter - room temperature or melted
- ¼ cup (53 g) unflavored vegetable oil - I use canola
- 1 cup (200 g) white sugar - granulated
- ½ cup (100 g) soft brown sugar - packed, see note 1 on blog
- ⅔ cup (75 g) cocoa powder - unsweetened
- 1 tsp coffee powder
- 1 tsp vanilla essence/extract
- 2 large eggs - room temperature
NOTE: In the video I mention 1/2 a cup or 100g of butter, but it should be 113g of butter as stated in the ingredients list above :)
Bake at 160 °C (320°F) with the fan on for 22-25 minutes depending on how fudgy you want your brownies to be (I recommend 22 minutes). If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F). Once done, poke a toothpick into the center and it should come out dirty.

INGREDIENTS:
1 cup butter
4 (1 ounce) squares unsweetened chocolate
2 cups white sugar
4 eggs
1 cup all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups chopped walnuts
Directions
Preheat oven to 350 degrees F. Grease a 9x13 inch baking pan.
In 3-quart saucepan over very low heat, melt butter or margarine and chocolate, stirring the mixture constantly. Remove from heat, and stir the sugar into the chocolate. Allow the mixture to cool slightly. Beat in the eggs one at a time, mixing well after each, then stir in the vanilla. Combine the flour and salt; stir into the chocolate mixture. Fold in the walnuts. Spread the batter evenly into the prepared pan.
Bake in oven 30 to 35 minutes. Brownies are done when toothpick inserted into center come out clean. Cool in pan on wire rack.
