1/2 c Evaporated milk
1/2 c Quick-cooking rolled oats
1/2 c Coarsely chopped black
-walnuts 1/4 c (4 Tbs.) butter, melted
1 ts Vanilla
Salt Unbaked pastry for -single-crust pie Here's another Amish recipe for all the masochists who enjoy shelling Black Walnuts. In large mixing bowl, combine eggs, sugar, syrup, milk, oats, nuts, butter, vanilla and 1/8 teaspoon salt, mixing well. Line 9-inch pie plate with pastry, trim and flute edge. Place plate on oven rack and pour in filling. Protect edge of pie with foil to prevent over browning. Bake at 350F for 25 minutes. Remove foil. Bake for about 25 minutes more or until top is deep golden brown and slightly puffy. Filling with be slightly soft, but will firm up as it cools. Cool completely. Makes 1 pie. OATMEAL PIE {MOCK PECAN PIE}
I adapted this recipe from The Miller Cookbook. The consistency of this pie is just like pecan pie but with a crunchy oatmeal top instead of pecans. I will make this pie again! I love recipes that surprise guests. I hope you give this recipe a try.
RECIPE:
INGREDIENTS:
1 cup sugar
1/2 cup coconut
1/4 cup butter, melted
1/2 cup milk
3/4 cup oatmeal
3/4 cup dark corn syrup
2 eggs
1/8 tsp. salt
1 tsp. vanilla
for the crust:
1 egg
1 frozen pie shell
2 tsp. water
INSTRUCTIONS:
Preheat oven to 350 degrees.
Add the filling ingredients in a large bowl and mix until combined. Set aside.
In a small bowl whisk together the egg and water. Using a pastry brush, brush the enitre crust with the egg mixture. Even the bottom and sides, this will help the crust from getting soggy.
Pour in the filling into the crust.
Wrap the crust edges in foil, but try not to let the foil sit on the filling.
Place the pie on a baking sheet in the oven. Bake for 50 minutes, but at the 40 minute mark, remove the foil and continue to cook for 10 more minutes. Let the pie cool on the counter or in the fridge for at least 3 hours before serving. The filling takes some time to set. Serve with ice cream and enjoy!

This is a super-easy pie to put together and a great option when you don't have any fruit to use for filling, and delivers a nice oatmeal flavor. This pie isn't overly sweet, so it pairs well with fresh whipped cream or ice cream, and only requires a handful of ingredients.

Add 2 sticks of softened unsalted butter.
Add 1 cup of white sugar.
Add 1 cup of brown sugar.
Add two eggs and mix.
Add 1 tsp of salt to 3 cups of flour.
Add 1/2 tsp of baking soda.
Mix thoroughly.
Add small amounts of the flour mix to the batter and mix.
If Black Walnuts are out of seasonal they can be purchased.
Mix in 1 cup of Black Walnuts.
Roll into 1.5 inch balls.
Preheat oven to 350 Fahrenheit.
Bake for 8-10 minutes.
Place on a rack to cool.

FYI - The following is a rough draft of the video I will be posting on August 2nd.
▶️ INGREDIENT LIST: (12 cookies)
175g Old fashioned rolled oats - 1 + 3/4 cup (Both Regular Rolled Oats and Gluten-free Oats work well)
47g Coconut sugar - 1/4 cup or to taste (OR Palm sugar)
100g Walnuts - 1 cup
70g Raisins - 1/2 cup
125g Smooth Almond butter - 1/2 cup OR Nut butter of choice
1 medium Apple (170g approx.) - chopped
1/4 Teaspoon salt (I have used Pink Himalayan salt)
1/4 Teaspoon baking soda
1 Teaspoon baking powder
1 Teaspoon cinnamon
1 Teaspoon vanilla extract
▶️ METHOD:
Transfer all the ingredients to a food processor and process until it reaches a coarse consistency. Please note that the mixture will be very sticky right now but don’t worry it’s all good.
Line a baking tray with parchment paper and scoop 2 tablespoon of the the mixture on the baking tray. Since the mixture is very sticky at this point, grease your hands with some oil or you can simply flatten it out evenly with a butter knife to 1/2 inch thickness.
Preheat the oven to 350F and bake for about 18 minutes or so. The baking time also depends on the heat of your oven so adjust the baking time accordingly.
Once baked let it cool and then transfer it on to a wire rack so that the cookies do not collect moisture at the bottom and to prevent it from getting soggy. The cookies are very delicate right after it's baked, so let it cool down completely before handling. Store the cookies in an air tight container to prevent it from drying out.
These cookies also freezes well, you can make a back of it and freeze it for later - a grab and go breakfast.
▶️ IMPORTANT TIPS:
- the mixture is suppose to be sticky so grease your hands with some oil or you can simply flatten it out with a butter knife to 1/2 inch thickness
- the baking time depends on the heat of your oven to adjust it accordingly if needed - use your judgement
- some people are not very fond of raisins but it works very well for this recipe. Once the raisins are blended with the other ingredients you wont notice it at all
- the cookies are very delicate right after its baked so let it cool down completely before handling or storing it
- Store the cookies in an air tight container to prevent it from drying out
- these cookies also freezes well so you can make a batch and freeze it for later - a grab and go

2 Bananas and 1cup of oats. Only 3-ingredient snack ready in 3 minutes
Today, I will be sharing with you how to make banana cookies. It's one of my children's favorite snacks. The recipe for these cookies is very simple, without using baking powder, baking soda, sugar, oil & flour, The COOKIES are very healthy and delicious!
1cup=250ml 1/4cup=60ml
Two ripe bananas
The weight of the peeled banana is about 170 grams
Put the bananas in a large bowl and mash them with a fork
Add in 1 cup of quick oats
1/4 cup dried cranberries, chopped
Add dried and chopped cranberries
Mix well
Prepare a large baking pan and line it with parchment paper or a silicone baking mat
Dig a tbsp and put it on the baking tray
This recipe can make 12 small biscuits
Use the back of a spoon to gently press to form a small round shape with a diameter of about 6 cm
Put it in the preheated oven and bake at 175 degrees Celsius or 350 degrees Fahrenheit for 15 minutes
The taste of this biscuit is slightly chewy on the outside and very soft on the inside
This is a very healthy and simple recipe
My kids absolutely love this cookie!
