How To make Black Walnut Sundae
3 c Sugar
7 ts Cocoa
3 Margarine
6 Eggs
3 c Flour
1 1/2 ts Soda
1/2 ts Salt
1 c Milk
2 ts Vanilla
2 ts Black walnut extract
1/3 c Black walnuts
Finely chopped Marshmallow icing: 1 7/8 c Sugar
3 Egg whites
6 tb Water
1 1/2 ts Cream of tartar
1/4 ts Salt
1 1/2 ts Vanilla
1 1/2 ts Black walnut extract
1 c Black walnuts
Finely chopped 1 1/2 c Small marshmallows
CAKE: In a large mixing bowl cream sugar, cocoa, and butter until light and fluffy. Add eggs one at a time, beating well after each addition. Sift flour, soda, and salt together and add to mixture alternately with milk, starting and ending with flour. Mix in flavoring and fold in chopped nuts. Bake in three (3) greased and floured 9" layer pans. Bake at 350~F for 35-40 minutes. MARSHMALLOW ICING: In top of a double boiler mix together sugar, egg whites, wtaer, cream of tartar, and salt. Beat with electric beater over boiling water for 15 minuts. This should be on low heat. Immediately add marshmallows, remove from heat and beat another 5 minutes. Add flavorings and spread on cake. Sprinkle nuts over the top of cake to make the sundae. Source Prize Winning Recipe from the State Fair of Texas, 1976.

Kit-Kat Sundae
Can you resist the aroma, let alone the sight of chocolate fudge sauce rich with the flavours of chocolate, honey and vanilla ice-cream. Well, here is a dashing dessert made of crushed Kit-Kat chocolate fingers, chocolate fudge sauce and vanilla ice-cream that will make you fall in love with chocolate, all over again! The best part is that this quick and easy Kit-Kat Sundae, seated smugly in a glass, is so awesome it can please anybody, young or old!
Preparation Time: 5 minutes.
Cooking Time: 5 minutes.
Makes 2 glasses
For the chocolate fudge sauce (makes 8 tbsp)
½ cup roughly chopped dark chocolate
1½ tbsp butter
½ tsp sugar
½ tbsp honey
½ tsp vanilla essence
Other ingredients
8 tbsp coarsely crushed kit kat chocolate fingers
2 scoops vanilla ice-cream
For the garnish
A few gems
2 kit-kat chocolate fingers
For the chocolate fudge sauce
1. Combine the butter, sugar and ¼ cup of hot water in a broad non-stick pan and cook on a medium flame for 2 to 3 minutes or till the sugar melts completely, while stirring continuously.
2. Add the chocolate and honey, mix well and cook on a medium flame for another 1 to 2 minutes or till the chocolate melts completely, while stirring continuously. Keep aside to cool for 5 to 7 minutes.
3. Add the vanilla essence and mix well. Keep aside.
How to proceed
1. Sprinkle 2 tbsp of crushed kit-kat chocolate fingers evenly in a serving glass.
2. Pour 2 tbsp of chocolate fudge sauce and place a scoop of vanilla ice-cream over it.
3. Again pour 2 tbsp of chocolate fudge sauce over it and sprinkle 2 tbsp of crushed kit kat chocolate fingers evenly over it.
4. Repeat steps 1 to 3 to make 1 more glass.
Serve immediately garnished with a few gems and a kit-kat chocolate finger in each glass.

Summer is upon us and that means ice cream season is here. Even though many of us may enjoy ice cream year round, summer seems to be the season when it is enjoyed most. Both for it's creamy delicious as well as it's cooling properties. How many of us have fond summer memories of being treated to a sundae at the local creamery? If you are from the south, then you may be familiar with a common ice cream topping called wet walnuts which is really just a sweet, syrupy topping full of walnut halves. Perfect for the top of a scoop of vanilla ice cream or in addition to hot fudge on a sundae. This is the quintessential topping for the discerning sundae maker! They are very easy to make and will last in your fridge for up to three months, but I promise they will not last that long!
As I mentioned, this topping is very simple to make. A combination of pure maple syrup, corn syrup (I used organic), brown sugar salt and vanilla extract, this topping goes together quickly. The hard part is waiting for it to cool from it's molten state so you can enjoy this tasty, homemade treat!
I also made a jar of wet pecans just for fun and they taste just like old fashioned pralines! These are wonderful on ice cream or used as a decoration on a fancy frosted layer cake. Think how wonderful these would taste served on top of French toast, pancakes or waffles! How about some stirred into your morning oatmeal? I think that the possibilities are only limited to your imagination!
These wet walnuts should not be confused with what the Europeans refer to as wet walnuts which are nothing more than freshly picked walnuts that have not had a chance to cure or dry out. They have a very creamy texture and are used in many savory culinary applications. These are sweet and decadent and a great finish to your favorite sundae.
This recipe is not suitable for canning. I have used mason jars simply for ease of storage. The Ball Blue Book does have a maple walnut ice cream topping recipe for canning in a small batch. This is a safety tested recipe which mine is not. You can find the canning recipe here:
