CHEESY POTATO CASSEROLE: Easy & Delicious Recipe/Perfect Side Dish Idea/a.k.a. Funeral Potatoes
This Cheesy Potato Casserole is so creamy and delicious, once you try it, you'll make it again and again. It really is the perfect side dish for all your family gatherings. I've been enjoying this potato casserole for years at my friend Charity's house because she and her husband host an annual Christmas feast. She triples the recipe for that gathering, and it's one of the first things to go! In fact, we jokingly call it, Charity's Crack Potatoes because they're so addicting. I finally had to ask her to join me in my kitchen to share her recipe. To my surprise, it was so easy to make. And, it turns out, this casserole in known by another name in the midwest: Funeral Potatoes. Go figure! Cheesy Potato Casserole
1 stick of butter, melted (1/2 cup)
1 16oz. container of sour cream
1 10oz. can Cream of Mushroom
fresh green onion (approx. 7 stalks), chopped
2 cups grated pepper jack cheese
1 package frozen shredded potatoes
Preheat oven to 350º
Melt butter in small bowl and add chopped green onion to it. Mix well. In separate large bowl, place sour cream, cream of mushroom and mix until combined. Add in melted butter with onion, and grated cheese and continue to stir. Add shredded potatoes and stir until all ingredients are well combined. Spoon into 9x13 ungreased casserole dish and bake 1 hour until top is golden brown.

- Fill the instant pot with potatoes (largest on the bottom, smallest on top). I chose to use Yukon Gold, but use your favorite potato.
- Add 1 cup of water
- Cook on High Pressure for 20 minutes. Do a quick release when done.
-Turn the Instant Pot off by hitting the Cancel button.
- Drain potatoes.
- Add butter and cream cheese to empty (off) instant pot. Add potatoes back. Using a potato masher or electric mixer, break up the potatoes.
- Add 1/2 cup of whole milk, and 1 teaspoon salt & 1/2 teaspoon pepper.
- keep mashing or mixing until desired texture is reached.

INGREDIENTS
1 lb (454 g) lean ground beef
1/2 small onion diced
2 cloves of garlic minced
1 tsp chili powder
1/2 tsp season all salt (or regular salt)
1/2 tsp black pepper
1/4 tsp ground cumin
4 oz (113 g) can of green chiles (drained)
15 oz (425 g) can of pinto beans (rinsed and drained)
16 oz (454 g) container of sour cream
1 oz (28 g) package onion soup mix seasoning
8 oz (227 g) block of cheddar cheese shredded
4 oz (113 g) shredded Mozzarella cheese
16 oz (454 g) jar of your favorite store bought salsa
8 to 9 flour tortillas (use enough to cover the dish surface area for two layers)
9 x 13 baking dish
INSTRUCTIONS
- In a large preheated skillet combine and cook ground beef, onions garlic, chili powder, seasoning salt, black pepper, ground cumin until ground beef is cooked through
- Next add green chilis, pinto beans with ground beef combine and sauté for a minute or so and remove from heat
- In a bowl combine sour cream, onion soup mix, mozzarella cheese and combine well, then set aside
- In a 9 x 13 baking dish add 1/2 cup of salsa and spread on the bottom of dish
- Next add a layer of flour tortillas, then spread half of the ground beef mixture evenly, next the entire bowl of sour cream mixture, top with shredded cheddar cheese, then another layer of flour tortillas
- Add the rest of the ground beef mixture and spread evenly, then more cheddar cheese, pour the jar of salsa and spread evenly over cheese, then top off with the rest of the cheddar cheese and cover with aluminum foil
- Bake in a preheated oven @ 350 degrees F / 176 degrees C for 25 minutes covered
- Then remove foil and bake and additional 15 minutes uncovered
- Remove from oven and allow to set for 20 minutes then serve
- This recipe serves 8 to 10 people

A sweet-and-savory mashup of juicy pineapple chunks and sharp cheese with a buttery, crunchy topping, pineapple casserole pairs wonderfully with turkey and ham! ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️⬇️
✅ PINEAPPLE CASSEROLE INGREDIENTS:
➤20 oz pineapple chunks in 100% pineapple juice, drained (reserve 2 tablespoons juice for the topping)
➤20 oz crushed pineapple in 100% pineapple juice, drained
➤1/4 c honey
➤1/3 c all-purpose flour
➤6 oz freshly grated shredded sharp cheddar cheese (about 1 1/2 cups), divided
✅ PINEAPPLE CASSEROLE TOPPING:
➤6 tbsp. unsalted butter, melted
➤20 buttery round crackers, crushed, such as Ritz (about 3/4 cup)
➤1/4 c panko breadcrumbs (or additional crushed crackers)
➤2 tbsp pineapple juice (reserved from one of the cans above)
✅DIRECTIONS:
1. Place a rack in the center of your oven and preheat the oven to 350 degrees F. Lightly coat a 9x9 baking dish with nonstick spray (an 8x10 dish or deep 9-inch pie plate will work as well).
2. Prepare the pineapple casserole filling: in a large mixing bowl, gently stir together the two drained pineapples (be sure to reserve 2 tablespoons juice for the topping) and honey.
3. Sprinkle the flour and two-thirds of the shredded cheese over the top. Stir again gently to combine, until the flour disappears and the cheese appears evenly mixed.
4. Spoon into the prepared baking dish. Sprinkle the remaining cheese over the top.
5. Prepare the topping: in a medium bowl, stir together the melted butter, crackers, breadcrumbs, and 2 tablespoons reserved juice with a fork until evenly moistened. Sprinkle over the top of the casserole.
6. Bake the pineapple casserole for 35 minutes, until the casserole is hot and bubbly and the topping is browned. Enjoy warm.

7 LAYER DIP | Easy Meatless No Bake Appetizer (aka Taco Dip)
Whether you call it 7 layer dip or taco dip (even though there is no lettuce in this one), this easy appetizer is sure to be a crowd pleaser, at your next party or game-day gathering (maybe your Super Bowl party!)
Original Recipe:
What you’ll need:
- 1-16 oz can of refried beans
- 2 tablespoons of milk
- 8 oz cream cheese, at room temperature
- 1/2 cup sour cream
- 2 tablespoons taco seasoning
- 1 cup of guacamole
- 1 1/4 cups salsa (if yours is very liquidy, press it through a sieve, to get out the excess moisture)
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sliced black olives OR diced tomatoes (or both!)
- 4 green onions, sliced
What you’ll do:
1. Get out a 9x13 pan. The disposable ones that you can find a grocery store, but use whatever one you want
2. In a medium bowl, mix together the refried beans and milk, until smooth (I think water would work just fine; I think the liquid is just to help loosen up the refried beans)
3. Spread your refried beans into the bottom of your pan, in a smooth, even layer
4. Again, in a medium bowl, combine your softened cream cheese, your sour cream, and your taco seasoning. Mix it together until smooth. This may be done with a hand mixer, or in a stand mixer.
5. Spread the cream cheese mixture on top of your refried beans, in an even layer
6. On top of the cream cheese layer spread the guacamole into an even layer
7. on top of the guacamole layer evenly spread the salsa.
8. On top of the salsa layer sprinkle your shredded cheddar cheese in an even layer
9. On top of the cheese, sprinkle your sliced black olives or your diced tomatoes - or neither! (If you just don’t like them!)
10. On top of the olive/tomato layer, sprinkle year for sliced green onions
11. Place the dip in the fridge, to chill, for an hour, and then you’re ready to serve it, and enjoy! I enjoy eating it with tortilla chips, but the original recipe says you can serve it with crackers… You can serve it with us with whatever crunchy, dipping snack you want
