Cranberry Nut Orange Bread

INGREDIENTS
- 2 cups flour
- 1 cup sugar
- 1 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 tablespoons butter (softened)
- 3/4 cup orange juice
- 1 egg
- 1 1/2 cups chopped cranberries
- 3/4 cup chopped walnuts (optional)
- 1 tablespoon orange zest
DIRECTIONS
Preheat oven to 350 degrees.
Grease and flour the pans well if using traditional baking pans. I use paper pans to give away the bread as gifts!
Mix flour, sugar, salt, baking powder, and baking soda. Cut in butter, add orange juice, egg, and zest and mix, just to incorporate.
Fold in nuts and cranberries. To chop the cranberries, I use a food processor. You can also chop by hand.
Spoon into pans and bake. If using 3-4 smaller pans, bake for 30-40 minutes. If using one large pan, bake for 45-60 minutes.

INGREDIENTS
FOR THE SCONES
- 4 cups all-purpose flour
- 1/3 cup sugar
- 1 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 5 tablespoons cold butter
- 1 1/2 cups buttermilk
- 1 1/2 teaspoons vanilla extract
- 1 egg
- 2 tablespoons orange zest
- 3 tablespoons orange juice
- 1/2 teaspoon orange blossom water (optional, but adds intense orange flavor)
- 2 cups frozen blueberries
FOR THE GLAZE
- 1 cup powdered sugar
- 1 tablespoon orange zest
- 2 tablespoons orange juice
INSTRUCTIONS
FOR THE SCONES
Preheat oven to 375 degrees.
In the bowl of a stand mixer, combine the flour, sugar, baking powder, baking soda, and salt. Mix to combine.
With the mixer running on low, add the butter one tablespoon at a time. Allow each addition of butter to mix in for 30 seconds before adding the next. Once all the butter is added, the mixture should look like coarse sand.
Turn the mixer off and combine the wet ingredients. Whisk the buttermilk, vanilla, egg, orange zest, orange juice, and orange blossom water to combine. Pour the wet ingredients into the dry and mix until moistened and shaggy, about 1 minute.
Place dough on a well-floured board and knead until smooth. Pat into a roughly 16-inch circle. Pour blueberries on top and press in. Fold dough over on itself, kneading the blueberries into the dough. Press into a 12-inch circle. Cut into 8 equal wedges and set on a parchment-lined baking sheet.
Bake in the preheated oven until golden, 20-25 minutes. While baking, prepare the glaze.
Once the sones are baked, remove from the oven and cool 5 minutes on the baking pan. Then transfer to a cooling rack. Glaze the scones while slightly warm.
FOR THE GLAZE
In a large bowl, sift the powdered sugar.
Add the orange zest and juice.
Whisk until smooth, adding more orange juice for a thinner glaze and more sugar for a thicker glaze.

A great snack just about any time of the day. I especially baked this banana bread for my picky grandchild. I wanted to give him a snack that is filled with brain boosting ingredients such as walnut and blueberries. My grandson who was not a big fan of blueberries fell in love with this snack.
