Bourbon Glazed PORK LOIN Sous Vide! No experiment just THE BEST PORK LOIN EVER!
This glazed pork loin came out perfect! The combination of cooking it sous vide and making an amazing bourbon glaze for this pork loin was the best ever. I started off by using a 6lbs pork loin which I got in my local supermarket. The pork loin was some what lean but I could tell it was fresh. The pork loin was so good that I did not have to trim it at all it was ready to go right from the store.
I put my on rub together with another rub I had purchased from the store, it was just perfect. This rub was so good that we all ended up wanting more from this awesome cook. Not to mention the glaze which I pour it over the pork loin in the mid of the searing process. I used the searzall for searing together with another torch to keep things nice and fast. It really came out amazing and I hope you guys really enjoy this recipe.

I used an 6 lbs. pork loin
BOURBON PORK LOIN RUB
1 tsp Onion Powder
1 tsp Black Pepper
1 tsp Garlic Powder
1 tsp Smoked Paprika
1 tsp Salt
1/2 tsp Chipotle Powder
1/2 tsp Cinnamon Powder
1/2 tsp Cumin Powder
1 tbs Brown Sugar Bourbon
1 tbs Brown Sugar

Pan Seared Pork Tenderloin with Bourbon Glaze: Best Sauce for Pork Tenderloin
Bourbon isn't just for an Old Fashioned or a Mint Julep. This Bourbon Glaze has incredible flavor that takes a simple Pan Seared Pork Tenderloin to a new level! Paired with Mashed Potatoes and Braised Red Cabbage, this is an easy complete dinner that your family and guests will love!
Recipes:
Pork Tenderloin with Bourbon Glaze
Bourbon Glaze
1 tablespoon olive oil
2 shallots, chopped.
2 garlic cloves, chopped.
2 cups brown sugar
¾ cup balsamic vinegar
½ cup red wine
½ cup apple cider
3 tablespoons soy sauce
2 tsp black or green whole peppercorns
1 bay leaf
1 cup seeded and chopped plum tomatoes.
½ cup chopped red bell pepper.
5 sprigs fresh Italian parsley
1.5 ounces bourbon
In medium pot, heat olive oil over medium heat and add shallots and garlic. Cook until soft, but not browned. Add brown sugar, balsamic vinegar, red wine, apple cider, peppercorn, bay leaf, tomatoes, red pepper, parsley, and soy sauce. Simmer until reduced by ½. Strain the sauce and add bourbon. Serve warm over tenderloin.
Tenderloin
2 Pork tenderloins, trimmed.
2 tsp kosher salt
½ tsp freshly ground pepper.
3 Tablespoons olive oil
Preheat oven to 400 degrees. Season tenderloin with salt and pepper. (Season to taste). Heat olive oil in oven proof skillet over high heat and sear tenderloin on all sides. Place skillet in oven and roast tenderloin for 10 to 12 minutes. Internal temperature should be 145 degrees. Let meat rest for 10 minutes before slicing. During rest time, the internal temperature should rise to about 160. There should be just a little pink at this temperature.
Slice tenderloin and drizzle bourbon glaze. (It goes very well with mashed potatoes and braised red cabbage). Enjoy!
Braised Red Cabbage
1 tablespoon olive oil
3 large onions thinly sliced.
¼ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground cumin
1 small red cabbage thinly sliced.
¼ cup apple cider
¼ cup brown sugar
¼ cup red wine vinegar
In a large pot, heat olive oil over medium heat and sauté onions until soft. Add cinnamon, cloves, cumin and cook for 30 seconds. Mix in the cabbage and sauté for about 5 minutes, or until wilted. Add apple cider, suage and vinegar. Cover and braise over low heat for about 1 hour, or until the cabbage is tender.

Pineapple Bourbon Glazed Smoked Pork Loin Recipe
Ingredients Needed for Seasoning Pork Loin:
1 tablespoon of El Yucateco Caribbean Hot Sauce Chile Habanero
1/4 cup of your favorite BBQ Rub
4 lbs of trimmed Pork Loin
Ingredients Needed for Pineapple Bourbon Glaze:
- 3/4 cup of Light Brown Sugar
- 1/4 cup of Favorite BBQ Rub
- 1 1/2 cups or 12 ounces of Pineapple Preserve
- 1/3 cup of Molasses
- 1/2 cup of Bourbon
- 1 tablespoon of Red Wine Vinegar
- 1 tablespoon of El Yucateco Caribbean Hot Sauce Chile Habanero
Directions: (ALWAYS WASH YOUR HANDS BEFORE PREPARING ANY FOOD ITEMS!)
Prep on a Pork Loin is minimal but it is good to remove a little of the thicker silver skin so you have a little better chew. Criss-cross score the top of the Pork Loin with a sharp knife so you can get a little more flavor on the Pork Loin.
2) Spread about 1 TBS of El Yucateco Caribbean Hot Sauce Chile Habanero on your Pork Loin to use as a binder and then season it up with you favorite BBQ Rub.
3) Preheat your grill or oven to 275° and then place the pork line on a wire rack, place in the center of you cooker and set a timer for 1 hour and rotate your pork loin 180° to help give you equal cooking throughout the Pork Loin. I like to use a a wire rack that fits in a cookie sheet pan.
4) Now is a good time to start your Pineapple Bourbon Glaze. Add all 7 ingredients to a medium sauce pan and bring to a boil so you burn all the alcohol out of the bourbon. Make sure you stir frequently so it does not burn to the bottom of the pan. Then reduce heat to a simmer and stir occasionally.
5) Once the Pork Loin reaches an internal of 125° apply the first coat of Pineapple Glaze. Repeat this process at 130° and at 135°
6) When you Pork Loin reaches an internal temperature of 140° remove it from your cooker and place it on a cutting board and let it rest for 15 minutes lightly covered with aluminum foil.
8) Slice it up and ENJOY!
