How To make Brazil and Bulgar Wheat Burgers
2 tb Olive Oil
2 Onions
2 Celery Sticks
2 Garlic cloves
125 g Bulgar Wheat
250 g Brazil Nuts
300 ml Vegetable stock
2 tb Tomato puree
2 tb Parsley (chopped)
2 ts Dried mixed herbs
1 Egg (beaten
In a food processor chop finely the onion, garlic and celery. Seperatly chop nuts and set aside. Heat oil and add the onion, garlic and celery - saute until soft. Add the nuts and Bulgar wheat and saute for a couple of minutes until golden brown. Add the stock and simmer until the liquid is absorbed. Stir in tomato puree, parsley, herbs and the egg. Season with salt and pepper and leave until cool enough to handle. Shape into 'burgers' and either cook in oven at 400F/200C/Gas 6 for 15 to 20 minutes until heated through or cook in frying pan. Place in burger buns
with your favorite garnishes - I like cooked onion rings, lettuce, cheese and fresh tomato. If you have problems with the burgers falling apart when cooking try adding some grated cheese before shaping - this helps. An alternate serving suggestion is like a falafal. Take tablespoon sized amounts of mixture and fry in some oil until gold to dark brown. Put inside lightly warmed Pita bread with some salad and Chilli sauce. You can substitute your favorite nuts for the Brazils.

Tropical Sweet Potato Smoothie:
- 2 cups frozen pineapple
- flesh of 1 medium steamed (or roasted) sweet potato
- 1/4 cup hemp seeds
- 1 brazil nut
- 2 cups of coconut milk (the thin plant milk kind)
- 1/4 tsp ground cinnamon
Pea & Edamame Hummus:
- 1 cup steamed edamame beans
- 1 cup steamed peas
- 1/2 cup good runny tahini
- 1 tsp ground cumin
- juice of 2-3 fresh lemons
- 1 tsp of garlic powder (or 2 cloves fresh garlic)
- salt & pepper
- water to thin
Healthy Sweet Potato, Chickpea & Coconut Curry:
- 1 large sweet potato peeled & diced into bite size chunks
- 1 large carrot pealed & diced into big chunks
- 2 sweet red onions cut into thin strips
- 1 can of drained & rinsed chickpeas
- 1 can of chopped tomatoes
- 1 cup coconut milk (the plant milk version)
- large bowl (as much as you can fit in) of fresh spinaaaach
- handful of fresh coriander (cilantro)
- 1 tsp ground turmeric
- 1 tsp ground paprika
- 1 tsp garlic powder (or 2-3 fresh cloves minced up)
- salt & pepper
- serve with bulgur wheat, brown rice or quinoa

Kibbeh or Kibe Recipe.
Ingredients:
7 oz (198g) Bulgur (Medium Fine)
7 oz (198g) Ground Beef
4 oz (113g) Ground Beef
1 Small Onion
1 Garlic Clove
1/2 Tsp Cumin
1/4 Tsp Cumin
1 Tbsp Pine Nuts
Vegetable Oil
Curry Powder or Advieh Seasoning
Salt, Black Pepper, Dried Mint
Preparations:
1- Add 1/4 cup of water to the bulgur in a large bowl. (just enough to soak but not to submerge).
2- Rest the bulgur for 10 to 15 minutes.
3- Dice half of the onion.
