PA Dutch Potato Filling | Thanksgiving tradition
Today we teach you the perfect Pennsylvania Dutch potato filling. This is a traditional Thanksgiving recipe in our family, it’s easy to make, and we certainly hope you enjoy it as much as we do! Let us know what you think!
Recipe:
-2 onions
-4 or 5 stalks of celery
-Half a loaf of French bread
-Mashed potatoes (check out our last video to see how we made those!).
Note: if you use our previous mashed potatoes recipe, add an extra cup of heavy whipping cream, it helps the bread absorb more and be less dry!

Lebanon PA, 6.7.2021: PA Dutch Lunch or Dinner Casserole in Jo Ellen’s Kitchen
2 meats, 2 vegetables, 2 cheeses, & eggs
Ingredients:
• 8 eggs
• ½ teaspoon salt
• 1 box or small bag of frozen broccoli florets
• 1 – 6 ounce container fresh sliced mushrooms
• 1 medium sized onion, chopped (Optional)
• 1 thick slice of ham, cut into 1/2” cubes
• 1 pound of hamburger, fried
• 1 ½ cups sharp cheddar cheese
• 1 ½ cups mozzarella cheese
• PAM
Directions:
• Crack 8 eggs into a large mixing bowl.
• Add salt, broccoli, mushrooms, onion, ham, hamburger, and cheeses.
• Toss until eggs coat ingredients.
• Pour mixture into a 9” x 12” baking pan sprayed with PAM.
• Bake in the oven on 350 degrees for up to 35 minutes until eggs are done, contents are hot, and cheese is melted.
• Enjoy!

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

PA DUTCH AMISH EGG NOODLES
This simple but delicious egg noodle is the foundation of many a dish and makes a great side dish as well. They are easy to make. They just take a little time to let dry.

INGREDIENTS
3 egg yolks
1 whole egg
3-5 Tablespoons cold water
1 teaspoon salt
2 cups flour
Stock (vegetable, chicken or beef)
INSTRUCTIONS
Whisk together the egg yolks and egg until lightened in color. Whisk in 3 Tablespoons water and salt.
Add the egg mixture to the flour and work together with a wooden spoon until a shaggy dough begins to form.
If the mixture is too dry, add an additional Tablespoon or two of water until it comes together.
Turn the dough out onto a well floured surface and use your hands to knead the dough until smooth, or use a dough hook in your mixer about five to ten minutes.
Re-flour your surface if needed, then divide the dough into two balls.
Using a floured rolling pin, roll each dough ball out into a thin circle.
Allow the dough to dry until no longer sticky but still pliable, about 10 minutes to 1/2 hour.
From here you can either use a cutter to cut long strips to the desired width, or roll each circle up like a jelly roll (I roll starting on the long end) and cut using a cutter.
Lay cut strips out on a cooling rack to dry completely.
Store in an airtight container for up to 1 month.
When ready to cook, drop into boiling water or broth and cook for 10-12 minutes or until soft but still a tad chewy (NOTE: cooking time will vary based on the width and length of your egg noodles). .
