How To make Brigitte's Sauerbraten
2 lb Boneless roast beef
1/2 l Buttermilk
1 c Red wine
1 Bayleaf
1 Onion, sliced
2 Cloves
2 Peppercorns
5 Strips of bacon
1/2 l Water
1 cn (small) tomato paste
3 tb Cornstarch
2 Carrots, sliced
1. Put the meat in a ceramic or glass bowl. Pour the
buttermilk, wine, and bayleaf over the meat. Add the peppercorns and onions. Keep in the refrigerator for at least 3 days, marinating the meat daily. 2. After 3 days, remove meat from the refrigerator. In
a deep Dutch oven, fry the bacon and set aside. Put meat in the bacon drippings and brown on all sides quickly. Add 3 Tablespoons of the marinade (liquid only) and cover and simmer for 10 minutes. Add the water, tomato paste, and carrots. Crumble the bacon and add to the meat. 3. Cover and simmer for about 1 1/2 hours, making sure
to watch the level of fluids in the dutch oven. Replace with water if it gets too low. When the meat is done, remove the meat and the carrots and keep warm. Stir in the cornstarch to thicken the juices and boil for a short time to the desired consistency. 4. Slice the meat and serve with the gravy and potato
dumplings or wide noodles (other German choices include boiled potatoes or baked potatoes) and the carrots. Es muss nicht immer Hausschwein sein. Der Unterschied liegt um einen in der Größe, das Hausschwein ist kurzbeiniger und hat weniger ausgeprägte Eckzähne als das Wildschwein. Das Wildschwein, fachsprachlich auch Schwarzwild genannt, ist der Urahn des Hausschweins. Sein Geschmack unterscheidet sich von dem Fleisch des Hausschweins. Das Fleisch des Wildschweins schmeckt deutlich intensiver, ist magerer und hat eine festere Struktur. Die Medaillons werden kurz und scharf angebraten und anschließend für ca. 5 Min. unter den Grill gestellt.
Bei der Herstellung der Speck-Serviettenknödel kann man altes Brot verwenden. Dieses wird in Würfel geschnitten, Ei als Bindemittel dazu gegeben und Milch um die geschmeidige Konsistenz herzustellen. Der Speck wird in einer Pfanne ausgelassen und noch heiß in die Masse gegeben. Mit Salz und,wer will, Muskat die Masse abgeschmeckt. Anschließend formt man den Teig zu einem großen Kloß packt ihn in eine Folie ein. Dies in heißes Wasser geben und gar ziehen lassen.

Horse meat is the culinary name for meat cut from a horse. It is a major meat in only a few countries, notably in Central Asia, but it forms a significant part of the culinary traditions of many others, from Europe to South America to Asia. The top eight countries consume about 4.7 million horses a year. For the majority of humanity's early existence, wild horses were hunted as a source of protein.Because of the role horses have played as companions and as workers, and ensuing concerns about the ethics of the horse slaughter process, it is a taboo food in some cultures. These historical associations, as well as ritual and religion, led to the development of an aversion to the consumption of horse meat. The horse is now given pet status by many in some parts of the Western world, particularly in the United States, United Kingdom, and Ireland, which further solidifies the taboo on eating its meat.
Sauerbraten in 30 Minuten aus halbfertigen Lebensmitteln.
Fleisch abtupfen und im vorgeheiztem Schnellkochtopf von allen Seiten anbraten. Wenn Sie sauer mögen; dann Fleisch + 300 ml Sud , Deckel zu, Herd auf volle Kanne.
Ich mag nicht Säure, Fleisch + 300 ml Wasser, Deckel zu, Herd auf volle Kanne.
Auf dem Deckel gibt es Knopf und der geht langsam hoch. Wenn ich ca 5 mm auf dem Knopf gelbe Farbe sehe, schalte ich den H.erd zurück , auf 2 oder 3, lasse so 35 Minuten.
In der Zeit : Inhalt von Kartoffelnknödeln mit Wasser vermischen, nach 10 Minuten Knödel formen, danach in kochende , gesalzene Wasser rein, ca 15 min. langsam köcheln lassen.
Rotkohl einfach im Topf warm machen.
Soße: Ich koche Jäger- oder Bratensoße. Sie können natürlich Sauerbratensoße kochen. Mir ist die zu sauer.
