How To make Brown Sugar Prune Cake
1/2 c Butter or margarine
1 1/2 c C and H Golden Brown Sugar
-- firmly packed 2 Eggs
1/2 c Cooked pitted prunes,chopped
1 1/2 c All-purpose flour
1 ts Baking soda
1/4 ts Salt
1/2 ts Cinnamon
1/2 ts Nutmeg
1/2 ts Allspice
1/4 ts Cloves
2/3 c Buttermilk
1/2 c Chopped walnuts
Cream together butter and sugar until light and fluffy. Add eggs one at a time beating well after each addition. Stir in prunes. Combine flour, baking soda, salt and spices and add alternately with buttermilk to creamed mixture. Stir in walnuts. Pour into greased and floured 9-inch square pan. Bake in 350 degree oven 40 to 45 minutes or until cake tests done. Cool on rack. Cut into 9 squares. Serve with a dollop of sour cream or whipped cream. Top with brown sugar. Brown Sugar···100g
Granulated Sugar···68g
Whole Eggs···168g
Cake Flour···150g
Baking Powder···5g
Cocoa Powder···25g
Almond Flour···40g
Baking Chocolate···40g
Dried Prunes···90g
Dark Rum···15g
[Baking Time]
170℃/338℉ for 30-35 minutes
[How to Make]
1. Beat the softened butter at room temperature, add in salt and mix well, then add the brown and granulated sugar and beat until well combined.
2. Beat the eggs at room temperature and gradually add them to step 1, mixing until the butter mixture is smooth and creamy.
3. Add almond flour and mix well, then sift together cake flour, baking powder, and cocoa powder, add to the bowl and mix until the batter is glossy.
4. Mix the dried prunes and dark rum and add them to the bowl, then add the baking chocolate and mix well. Transfer the batter to a piping bag and divide evenly between the two pans, then bake.
5. Once the cake is out of the oven, pre-boil a mixture of sugar and water and brush onto the cake. Let it cool, then seal and refrigerate overnight before eating.

6 oz (170 gr) unsalted butter, at room temperature
3/4 cup (150 gr) packed brown sugar
3 large eggs
1/8 teaspoon almond extract, optional
1 cup (125 gr) all-purpose flour
1 cup (100 gr) almond flour
1/2 tablespoon baking powder
1 pinch salt
2 or tablespoons almond slices for the top
powdered sugar to sprinkle (optional)
