How To Make Brownie Bites
Fudgy brownie bites filled with an (optional) chocolate ganache filling!

Ingredients
12 Tablespoons unsalted butter cut into Tablespoon-sized pieces
½ cup semisweet chocolate chips 100g
1/2 cup natural cocoa powder 50g
1/2 teaspoon instant coffee grounds optional
1 cup tightly packed light or dark brown sugar 200g
1/2 cup granulated sugar 100g
2 large eggs + 1 large egg yolk
1 teaspoon vanilla extract
1 cup + 2 Tablespoons all-purpose flour 140g
1/2 teaspoon baking powder
1/2 teaspoon salt
Ganache filling (optional)
1 cup semisweet chocolate chips 170g
¼ cup heavy cream 60ml
½ Tablespoon unsalted butter
1 teaspoon vanilla extract
1 teaspoon bourbon optional
⅛ teaspoon salt
Instructions

00:16 Preheat your oven to 350F and spray a 24-count mini muffin tin with baking spray*
Combine butter and chocolate chips in a large, microwave-safe bowl. Microwave for 30 seconds. Stir well, microwave for another 15 seconds and then stir well again. Repeat for 15 seconds until chocolate and butter are completely melted and well-combined.
Stir in cocoa powder and instant coffee (if using).
Add sugars and stir again until combined.
Add eggs and egg yolk, one at a time, stirring well after each addition. Stir in vanilla extract.
02:28 In a separate, medium-sized bowl, whisk together flour, baking powder, and salt.
02:49 Add dry ingredients to wet and stir until well-combined.
03:43 Drop batter by 1 1/2 Tablespoon into prepared mini muffin tin (I like to use a cookie dough scoop to do this).
Transfer to 350F (175C) oven and bake for 18 minutes or until a toothpick inserted in the center comes out clean or with a few fudgy crumbs (not wet batter!).
Ganache
04:31 Combine chocolate chips, heavy cream, and butter in a small saucepan over medium-heat.
Stir frequently until chocolate is completely melted and mixture is smooth.
04:46 Remove from heat and stir in vanilla extract, bourbon (if using), and salt. Stir well.
Allow mixture to cool slightly at room temperature, about 10 minutes.
Use a small spoon to pour ganache into the indent of each brownie.
Allow ganache to firm up before eating (about 1-2 hours -- or you can enjoy them warm, it'll just be a bit messier).
05:38 If filling with ganache, immediately take a rounded teaspoon or Tablespoon and press into each brownie bite to make a well (if not filling, then simply allow brownie bites to cool and then enjoy!).
Allow brownies to cool for about 10 minutes before removing from muffin tin and placing on cooling rack. Prepare ganache.

How to Make Mini Brownie Bites at Home (ASMR)

**Ingredients:**
3 eggs
200g sugar (1 cup)
250g bitter chocolate (1 ½ cup)
125g butter (½ cup)
100g flour (½ cup)
5g vanilla (1 tsp)
25g cacao (3 tbsp)
3g salt (½ tsp)
200g milk chocolate (1 ¼ cup)
10g coconut-oil (1 tbsp)
180°C (355°F) for 25 min

**How to Cook:**
- Preheat your oven to 355°F (180°C). Grease the baking pan and place greaseproof paper and grease it again with butter.
- In a mixing bowl, whisk together eggs and granulated sugar until well combined.
- In a bowl, melt the dark chocolates in the microwave in 20-30 second intervals until fully melted.
- Add room temperature butter to the melted chocolate and mix until it melts.
- Add the melted chocolate mixture to the egg mixture. Mix until the batter becomes smooth and creamy.
- Gradually add the dry ingredients by sifting to the wet ingredients, mixing until just combined.
- Pour the mixture into the bowl and smooth the top with a spatula.
- Bake in the preheated oven for approximately 25 minutes. Be careful not to overbake, as brownie can dry out quickly.
- Let the cooked brownie rest for 30 minutes until it reaches room temperature.
- Once brownie have cooled completely, slice it into equal pieces.
- Melt the chocolate chips and vegetable oil together.
- Dip each mini brownie bite into the melted chocolate, ensuring it's fully coated. Let any excess chocolate drip off.
- Place the chocolate-coated brownie bites on a baking sheet lined with parchment paper.
- Allow the chocolate coating to set by placing the baking sheet in the refrigerator for about 1 hour.
- Once the chocolate has hardened, remove the brownie bites from the refrigerator.
- Your chocolate-coated mini brownie bites are ready to be enjoyed!

Ingredients:
all purpose flour 1 cup ( 130 grams)
brown sugar 3/4 cup (180 grams) packed
white sugar 1 cup ( 200 grams)
salt 1 tsp
cocoa powder 80 grams (3/4 cup) use datch process or alcalized for better taste.
butter 200 grams ( 1 cup melted) unsalted
vanilla 1 tsp
egg 2 large ( 120 grams)
yolk 1 large (25 grams)
coffee powde 1 tsp. ( you can add more)
chocolate chopped ( 1 cup) I used half dark half semi sweet.
Chocolate sauce:
1/2 cup dark chocolate
1/2 cup cream or milk. ( You can also use water)
Caramel sauce:
3 full tablespoon of dulcet de leche in can
1/4 tsp
Baking time: 30 to 35 minutes depending on your oven. keep an eye on it. do not over bake.
Oven temperature: 180°

No, these aren't any ordinary brownies - they're brownie bites! To give brownies an update, take our go-to rich and fudgy brownie recipe and apply a few tasty presentation tricks (shown in the video). That's all it takes to make these familiar treats all the more enticing!

INGREDIENTS
8 ounces (2 sticks) unsalted butter
8 ounces premium unsweetened chocolate, cut into 1/4-inch pieces
5 large eggs, at room temperature
1 tablespoon vanilla extract
1/4 teaspoon salt
3 3/4 cups sugar
1 2/3 cups all-purpose flour (spoon into a dry-measure cup and level off)
One 9x13x2-inch pan lined with buttered foil
DIRECTIONS
Set a rack in the middle level of the oven and preheat to 375°F.
Melt the butter in a medium saucepan over medium heat. Let the butter get hot and start to sizzle after it's melted. Remove the pan from the heat and add the chocolate all at once. Gently shake the pan to submerge all the chocolate in the butter. Set aside.
Combine the eggs, vanilla, and salt in the bowl of an electric mixer fitted with the whisk attachment. First whisk by hand to mix. Whisk in the sugar by hand.
Whip on medium-high speed for 10 minutes, until very light.
Whisk the butter and chocolate smooth and scrape into the mixer bowl. Whip on the lowest speed just until smooth, then stop the mixer.
Sift the flour onto a piece of paper, bend the paper, and slide the flour into the bowl. Mix again on lowest speed until the flour is absorbed - no longer.
Remove the bowl from the mixer and use a large rubber spatula to give a final mixing to the batter.
Scrape the batter into the prepared pan and smooth the top.
Bake the brownies until they are firm, but not dry, and the point of a paring knife inserted in the center of the pan emerges with moist crumbs clinging to it, about 35 minutes.
Cool in a pan on a rack. Unmold the brownies to a cutting board and remove the pan and paper. Cover with another board and invert the whole stack. Remove the top board and wrap the brownies on their board in a double thickness of plastic wrap. Keep the brownies at cool room temperature or in the refrigerator overnight before cutting. Use a ruler to mark, then cut the brownies into 2-inch squares. To serve, pile the brownies on a platter.
Makes 24 square brownies.
