Chicken Yakisoba is more than just a mouth-watering and colorful bowl with buckwheat noodles. Tender chicken pieces, carrot, squash and bell pepper fried in a fast way in heated pan and a sauce made of simple ingredients make this dish perfect and all the more you will need just 20-25 minutes for cooking.

✅ Ingredients:
• chicken thighs fillet – 7 oz | 200 g
• soba noodles – 5 oz | 150 g
• onion – 4 oz | 100 g
• zucchini – 4 oz | 100 g
• bell pepper – 4 oz | 100 g
• carrot – 3 oz | 70 g
• green onion – 2 stalks
• garlic – 2 cloves
• classic soy sauce – 5 tbsp
• vegetable oil – 2,5 tbsp
• rice vinegar – 1 tbsp
• sugar – 1 tbsp
• sesame seeds – 2 tsp
• sesame oil – 1 tsp
• ground black pepper – ½ tsp
• salt – ½ tsp
• ground ginger – ⅓ tsp
• chili sauce – to taste
• water – 4 pt | 2 l

• pan or wok
• stockpot
• carving board
• bowl for sauce mixing
???? Chicken yakisoba Recipe:
1. Cut the bulb onion into feathers or half rings, carrot into large strips, squash and bell pepper into bars 1 cm thick, chicken fillet into ¼ in | 1 cm thick strips.
2. Cook the buckwheat noodles in boiling and lightly salted water as indicated on packaging. Drain the water as soon as cooked.
3. In a gravy boat or small bowl mix well the soy sauce, rice vinegar, chili sauce and sugar.
4. Heat the pan with 1 tbsp of vegetable oil over high heat and fry the chicken stirring for 4 minutes over high heat.
5. Take out the fried chicken into the bowl.
6. Add 1½ tbsp of vegetable oil and squash into the pan and fry stirring for 2 minutes over high heat.
7. Add the carrot and keep frying for a minute more stirring.
8. Add then the bulb onion and fry stirring for a minute over high heat.
9. Add the bell pepper and fry all the vegetables for 2 minutes more over high heat keeping stirring.
10. Add the chopped up garlic, ground black pepper and ground ginger, stir well while frying for a minute over high heat.
11. Then pour the prepared sauce into the pan, stir, reduce the heat to low, add the chicken and stir well.
12. Add the noodles and stir, add the cut green onion, roasted sesame seeds, sesame oil, stir all the ingredients well and switch off the stove.
13. Serve your soba noodles with chicken and vegetables hot as main dish or cooled as salad.

Buckwheat Chicken Pasta with Homemade Pasta Sauce | Grand Recipe
Full written recipe for Buckwheat Chicken Pasta with Homemade Pasta Sauce
Ingredients:
Buckwheat pasta 500g
Pasta sauce:
Tomatoes 500g
2 cloves garlic
One small onion (64g)
10ml olive oil
20g butter
50ml water
1tsp salt
10g sugar
1tsp oregano leaves
1tsp basil leaves
¼ tsp black pepper
Chicken mixture:
1kg chicken breast
3 small onions (200g)
Tomatoes 200g
10-12 mild green chillies
80ml olive oil
2tsp salt
½ tsp turmeric
1tsp garam masala
Bunch of coriander
Bell peppers
Process:
Pasta sauce:
Make deep x cuts in the tomatoes.
Put them in boiling water for 1 minute then remove and peel off the skin.
Cut into smaller pieces and blend for 10 seconds.
Chop cloves of garlic and onion into small pieces.
Place a pan on heat and add in 10ml of olive oil.
Melt in 20g butter.
Then add the chopped onions and garlic and sauté for a few minutes until golden brown.
Then add in the blended tomatoes and mix.
Pour in 50ml water and stir.
Then add 1 tsp salt.
Add 10g sugar.
Add 1tsp oregano leaves.
Add 1tsp basil leaves.
Add ¼ tsp black pepper.
Mix well.
Put the lid on and let cook for 30 minutes on low heat. Stir once in a while.
Pasta sauce is now ready. Put aside for now.
Chicken mixture:
Slice the onions.
Cut the tomatoes into small pieces.
Cut the green chillies into small pieces.
Cut the chicken breast into smaller bitesize chunks.
Place a pan on heat and add put in the onions.
Pour in 80ml olive oil.
Saute the onions until golden.
Then add in the tomatoes and chillies and stir.
Add in 2tsp salt.
Add in ½ tsp turmeric.
Add in 1 tsp garam masala.
Stir.
Add in the chicken and mix well.
Cover with lid and let cook for 15 minutes on low heat.
In the meantime cut a bunch of coriander.
Cut one green, red and yellow bell pepper or just one of your choice.
Back to the chicken. Continue to cook until the water dries up. When water has dried up, continue to cook for another 10 minutes.
Then add in the bell peppers and mix well.
Then add in the pasta sauce made earlier and mix.
Then add in the coriander and mix.
Chicken mixture is ready.
Cooking the pasta:
Fill a saucepan with water and bring to a boil.
When water is boiling, stir in the pasta. Let cook for about 10 minutes.
Then strain the pasta.
Combine:
Now add the pasta to the chicken mixture and mix well.
Delicious pasta is ready. Dish out and enjoy.

Every soba making experience is a lesson. I love soba noodles a lot but many have white flour mixed which makes it not gluten free. Though I am not gluten intolerant, when I have the pure buckwheat noodles, my body feels light, healthy and happy. So I decided to learn how to make them when I was in Japan both in Tokyo and Kyoto from a few teachers. Asako san lives in Tokyo and her family makes and teaches soba making. It is said that it takes 10 years to become a soba master. However if I can learn a skill and keep my stomach happy whenever I want to eat healthy soba noodles, it will be the best gift ever to myself and those around me.
