How To make Buckwheat Waffles
Buckwheat Waffles No. 2467 Yields 6 Servings
1 1/2 Cups Milk 1 LARGE Egg
2 Tbls Molasses 1 Cup All Purpose Flour
2 Tbls Butter 1/2 Cup Buckwheat Flour
1 Pkg Active Dry Yeast 1/2 tsp Salt
1/2 Cup Warm Water
Heat the milk in a (2 Qt.) saucepan just until bubbles form around the side of the pan. Remove from the heat. Stir in the molasses and butter. Allow to cool until just warm. Place the warm ((105 degrees-115 degrees) water in a medium bowl. Sprinkle the yeast over. Stir. Set aside to soften for 5 minutes. Beat the egg into the yeast mixture. Add the flours and salt, alternating with the warm milk mixture, stirring with a wire whisk until well blended. Cover the batter with a cloth and let rise in a warm place, away from drafts, until doubled in size (about 45 minutes). Heat the waffle iron. Ladle enough batter into the waffle iron to cover 2/3 of the grid. Use a spatula to spread the batter to the edges. Close the cover. Cook until the steaming stops. Use a fork to remove the waffle from the iron. Continue with the remainder of the batter.

Avocado and Chia Buckwheat Waffles

PREPARATION TIME: 5 minutes
COOKING TIME: 10 minutes
SERVINGS: 6 - 8 servings
INGREDIENTS:
120g/4.25oz buckwheat flour
25g/1oz chia seeds
375ml/12.75fl oz soy milk
80g/2.75oz avocado
¼ tsp. salt
1 tsp. baking powder
1 tsp. vanilla extract
PROCEDURE:
1. Combine all ingredients in a blender.
2. Process until smooth.
3. Let stand for at least 2 minutes, then blend again.
4. Cook for 10-12 minutes in a waffle iron.
Tip: This waffle batter cooks longer than one made with all-purpose flour. Do not open the waffle iron within the suggested cooking time.

Buckwheat Waffles
4 ingredient buckwheat waffles for an easy wholesome breakfast.
Gluten-free, dairy-free, nut-free.
1 1/4 cups buckwheat flour
1/4 cup ground linseed or flaxseed (same thing)
1 cup plant milk
1 1/2 cups water
1/2 tsp salt
Set waffle iron to low heat (e.g. 2 - 5 is my max)
Whisk everything together
Lightly grease waffle iron with coconut oil
Add one ladle of mixture
Allow 5-6 mins (without opening!)
Loosen waffle with a wooden skewer
Enjoy sweet or savoury while still hot!
Buckwheat Waffles (Vegan & Gluten Free)
Buckwheat Waffles
(this recipe makes about 5 waffles)
Dry Ingredients:
1.5 cup buckwheat flour
1 tsp baking soda
1 tbsp cinnamon
¼ tsp salt
A pinch of nutmeg (optional)
1 tbsp psyllium husk (optional)*
Wet Ingredients:
3 tbsp water (to dissolve the psyllium)
1 - 1 ½ cup plant based milk
¼ cup applesauce
1 tsp apple cider vinegar
1 tsp vanilla extract
To start, combine the psyllium with water and let it aside while mixing the dry ingredients.
Once the dry ingredients are well mixed, add the psyllium and all the remaining wet ingredients.
You may need to use all 1 ½ cup of milk but I would recommend starting with 1 cup and slowly adding it as needed. For this recipe I used 1.5 cup of almond milk.
This batter works really well for pancakes too.
You can freeze them after they cool down completely. The best way to warm them up is by placing them into a toaster using the defrost setting.
* Adding psyllium to this recipe will make your waffles/pancakes a bit more soft. Buckwheat flour is drier than regular flour but it is possible to skip the psyllium if you wish.
