Blueberry Muffins
1/2 cup softened butter
1 cup sugar
2 tablespoons olive oil
2 eggs, room temperature
1 & 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon flour
2 cups blueberries
1) preheat oven to 350* F
2) mix together butter, sugar, olive oil until the mixture is fluffy
3) incorporate eggs
4) add dry ingredients and mix
5) add buttermilk and vanilla extract and stir
6) sprinkle 1 tablespoon flour onto the blueberries- this keeps them from sinking to the bottom of the muffin. Stir in the blueberries.
7) fill the muffin cups just a little over halfway.
8) bake 12-18 minutes, or until they’re golden and nicely puffed up.

Lemon Blueberry Muffins
1 ½ cups flour
¾ cup sugar
1 tsp baking soda
1 tsp baking powder
Pinch of salt
¾ cup plain yogurt
½ cup buttermilk
1 egg
¼ cup vegetable oil
1 lemon, zest and juice
1 cup blueberries
In a large bowl, whisk together flour, sugar, baking soda, baking powder and salt. In another bowl, whisk together yogurt, buttermilk, egg, oil and lemon zest & juice. Fold in dry ingredients into the wet mixture and stir in blueberries. Divide mixture up into a lined muffin tin. Bake at 375ºF for 20-25 minutes or until a toothpick can be inserted and comes out clean.

Blueberry Muffins

Ingredients
2 1/2 cups flour, divided
2/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon nutmeg
1/2 cup Daisy Sour Cream
1/4 cup 2% milk
1/2 cup melted butter
2 eggs, beaten
1 1/2 cups frozen blueberries, unthawed
1/4 cup cold butter
1/2 cup quick oatmeal
1/4 cup brown sugar
2 tablespoons cinnamon
2 teaspoons sparkling sugar
Directions
Preheat the oven to 400 degrees. Batter: Beat 2 cups flour, sugar, baking powder, salt, nutmeg, sour cream, milk, 1/2 cup melted butter, and eggs until thoroughly mixed. Fold in blueberries. Pour into muffin tins. Crumb Topping: Cut the ¼ cup cold butter into small cubes. Mix the oatmeal, 1/2 cup flour, brown sugar, cinnamon and cubed cold butter together with pie cutter until it forms small pebbles. Sprinkle the topping mixture on top of the batter in each muffin tin. Sprinkle each with sparkling sugar. Bake the muffins for 25-35 minutes. Serve hot. *Optional: use two butter knives to form topping, if a pie cutter is unavailable.
