When I make pancakes, I do not bother with those chemical laden instant pancake mixes that you just add water to. Instead I like to make my own batter, as it uses just a few ingredients that most of us have in our pantries.

Buttermilk Pancakes- quick and easy recipe
These buttermilk pancakes with their slightly crispy edges and tender insides are a true winner. I've had countless people ask me for this recipe, so I finally sat down to write it down for the good of everyone's breakfast, or brunch, or dinner... well you get it. The trick that I have found to perfect pancakes is how you put the ingredients together. As usual you put the dry ingredients all together in a larger bowl, with the wet ingredients needing a bit more attention. I like to whisk my eggs and oil together to create an emulsion first and then add my buttermilk. I then pour the buttermilk mixture into the dry ingredients and mix just until completely combined. Heat up your griddle or skillet. I prefer to use an electric griddle because it keeps the temperature consistent, oh and I can make a lot at once, an absolute must around here. I hope that this recipe becomes a favorite in your house like it is in mine. We like to top ours with warm maple syrup, fresh fruit and whipped cream, or preserves. Enjoy!
1 1/4 cups all purpose flour
1/4 cup sugar
1 tsp baking soda
1 heaping tsp baking powder
1/4 tsp salt
1 large egg
1/3 cup canola oil
1 1/4 cups buttermilk
Combine the first 5 ingredients together in a large mixing bowl and set aside. In a separate bowl beat egg with a wire whisk and slowly add oil until it's really thick and creamy. Add buttermilk and mix to combine. Make a well in your dry ingredients and pour in buttermilk mixture. stir until just combined there may be a few small lumps (this is normal, do not over mix). Melt a little butter or pan spray on your preheated griddle 275-300 degrees F. Pour batter on allowing space for the pancakes to spread a little, allow 2-4 minutes per side, flip when bubbles form and edges set.
Meal prepping? double the recipe and place cooked and cooled pancakes on a baking sheet lined with wax paper or parchment paper freeze for about 30-45 minutes, put frozen pancakes into a gallon freezer storage bag and store in the freezer for up to 3 months. Apple-Buttermilk Pancakes - Everyday Food with Sarah Carey
Did you know that today is National Pancake Day? Any food as spectacular as a pancake deserves its own holiday! In celebration, I'm making a stack of sweetly tart buttermilk-apple pancakes. And the best news of all: This recipe relies on applesauce -- instead of lots of sugar -- to help create a deep fruit flavor, so it's healthier than the average flapjack you'd make from a mix. I can't think of a more fall-friendly (and delicious!) breakfast than this one, so grab your spatula and start cooking.

Make your batter better: Mix it the night before you plan on cooking your pancakes and let it rest in your fridge.

INGREDIENTS
1 cup all-purpose flour (spooned and leveled)
1 tablespoon sugar
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine salt
1 cup buttermilk
1/2 cup applesauce
1 large egg
1 tablespoon unsalted butter, melted
Cooking spray
1 apple, peeled and diced small (1 cup)
DIRECTIONS
STEP 1
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl, whisk together buttermilk, applesauce, egg, and butter. Add applesauce mixture to flour mixture and whisk until just moistened (batter should have some lumps; do not overmix).
STEP 2
Lightly coat a large nonstick skillet or griddle with cooking spray and heat over medium-high. In batches, drop batter by 1/4 cupfuls into skillet. Sprinkle each pancake with diced apple. Cook until bubbles appear on top and a few have burst, 2 to 5 minutes. Flip pancakes and cook until golden brown on underside, 2 to 5 minutes. Repeat with more cooking spray and remaining batter, wiping skillet clean between batches.
