How To make Cabbage and Bacon (Irish)
1 x Lg or 2 small Savoy cabbages
8 x Strips bacon
1 x Salt and pepper
4 x Whole allspice berries
300 ml Bacon or chicken stock
Cut the cabbage in half and boil for 15 minutes in salted water. Drain, and soak in cold water for 1 minute, then drain well and slice. Line the bottom of a casserole with half the bacon strips, then put the cabbage on top and add the seasonings. Add enough stock to barely cover, then put the remaining strips of bacon on top. Cover and simmer for an hour, until most of the liquid is absorbed.

I hope you like this recipe. We think it's delicious! It might help that we produce all the (main) ingredients ourselves, of course...
People in Ireland have eaten this for centuries - although when times were tough, probably without the bacon (milk was often used instead).
Is it necessary to say that all the ingredients are boiled until cooked? Bacon takes about 20 minutes/pound, potatoes take about 20 minutes and cabbage about 8 minutes.

The Devils Menu.com: Traditional Irish dish that I tweaked slightly. The dish is Boiled shoulder of bacon, cabbage cooked with some of the water from the bacon. Boiled 'floury' rooster potatoes and a white sauce (veloute)
Now my mum denies this, but me and my sisters all agree that mum served us Boiled Bacon and Cabbage at least 4 times a week as we grew up. I had to make this better for everyone and think I have. The perfect St.Patricks day dinner. Sláinte!

FRIED CABBAGE WITH BACON is not only delicious but it's easy to do, it can be eaten as a main meal or as a side dish and is sure to please. It can be shredded or cut into big pieces and made stove top or oven baked, you can use the bacon grease or butter and can also leave the bacon out and substitute it with a meat substitute for non meat eaters. it is an inexpensive dish that many people don't think of preparing, but once it's served it is hard to put down.
INGREDIENTS
1/2 medium to large cabbage
5 slices thick cut bacon
1/2 large onion (chopped)
2 green onions (white and green)
2 medium carrots (diced)
2 large garlic cloves (minced)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
1/4 - 1/2 C. water
1/2 tsp salt
lemon pepper (to your liking)
pepper flakes (optional to your liking)
