Cantucci are traditional almond Tuscany biscuits that contain all the genuine italian cooking love: fresh eggs, flour, almonds and honey. They're super easy to prepare! Cantucci have a crispy consistence, so the tradition says you have to dip them into the Vin Santo (Holy Wine), a sweet wine from Tuscany.
I can guarantee they're great on their own, without anything else!
You can keep them in a cookie can for weeks, so they're a great gift idea for Christmas.

Ingredients:
Makes about 38 Cantucci
3 cups (450 g) All Purpose Flour
7/8 cup (200 g) Granulated White Sugar
1 tablespoon Honey
5 oz (150 g) Raw Unpeeled Almonds
3 eggs and 1 yolk
1-2 teaspoons vanilla paste (or vanilla extract)*
1 teaspoon baking powder
2 pinches of salt
* someone add vanilla and also other arome (orange zest ecc..), but the original Cantucci do not require many flavours since traditionally they're served with Holy Wine which is very tasteful.
So I prefer to cook them in the most traditional way, adding just a little vanille.
Directions:
In a big bowl combine the flour, the salt, the sugar and the baking powder.
In a medium size bowl whisk the eggs, the honey and the vanilla paste.
Make a dip in the center of the dry ingredients and add the eggs mix; start to combine using a spoon and in the end knead to form a slightly uniform dough. Add the unpeeled almonds.
Transfer the dought to a lightly floured surface and knead about 1 minute, or until the almonds will be weel combined in the center of the dough.
Divide the dough in two equal parts and roll them into two logs that are about 11 inch. (25 cm) long.
Place the logs on a baking sheet lined with parchment paper.
Whisk 1 yolk and 2 tablepoons of milk and brush the logs.
Bake in preheated oven at 350° F (180° C) for 20-25 minutes, until golden brown.
Let them cool for about 10 minutes. Cut diagonally into 0,5 inch. (1,5 cm) slices (be careful, the logs are still hot).
Place the cookies back on the bakink sheet lined with parchment paper and bake at 350° F (180° C) for 10 minutes.
You can store Cantucci for weeks in a cookie can.

Triple Chocolate Biscotti (cantucci) made with cocoa powder, chocolate chips and dipped in luscious melted chocolate. Rich, decadent and delicious, perfect for dipping in your morning cappuccino or cup of tea.
Ingredients
1 + ½ cups all-purpose flour (200g)
½ cup cocoa powder (50g)
¾ cup sugar (150g)
3 large eggs at room temperature
1 tbsp honey
1 tsp vanilla extract
½ cup dark chocolate chips (100g)
1 pinch salt
¾ cup chocolate for dipping (dark,semisweet or bittersweet) 100g
Instructions
Preheat the oven to 350F (180C) and line a baking tray with parchment paper.
Sift the flour and cocoa powder into a large mixing bowl. Add the sugar and salt and whisk everything together until well incorporated.
In a separate bowl add 2 large eggs and 1 egg yolk (reserve the extra egg white for brushing the biscotti). Add the vanilla extract and honey and lightly beat the eggs together.
Make a well in the centre of the dry mixture and add the eggs and vanilla. Using a fork, mix everything together until a rough dough starts to form.
Add the chocolate chips and knead the dough with your hands until it comes together. It may seem to dry at first but don’t add anymore liquid it will come together after a minute or so.
For the dough into a ball and cut in half. Shape each half into small logs then press each log to about 2cm (¾ inch) thick and 4 inches wide.
Place them on a lined baking tray and brush the tops of the logs with a little egg white. Bake in the oven for 25 minutes.
Remove from the oven and let cool for a couple of minutes. Turn the oven down to 265F (130C) then cut each log diagonally to create biscotti about ½ ich thick (1cm) thick.
Arrange the biscotti back on the baking tray and bake for another 25 minutes, remove and set aside.
Melt the chocolate in a bowl above a pot of gently simmering water (or use a microwave) and dip one end of each biscotti in the melted chocolate. Let the cookies set before serving.

Chocolate Hazelnut Biscotti Biscuits Recipe
Total Time: 1 hour
Ingredients
• 150 grams hazelnuts (you can use any nuts)
• 210 grams firmly packed light brown sugar
• 230 grams all-purpose flour
• 30 grams cocoa powder
• 1 tablespoon instant espresso powder
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 3 large eggs
• 1 1/2 teaspoons pure vanilla extract
Method
1. Heat oven to 180C/160C fan and line a large baking sheet with baking paper.
2. Whisk together the eggs and sugar until light and fluffy.
3. Sift the flour, cocoa and bicarbonate of soda into a bowl, then add the hazelnuts. Fold into the egg mix to make a soft dough.
4. Tip onto a lightly floured surface, shape into a 25cm sausage shape with lightly floured hands, then transfer to baking sheet.
Flatten to a 3cm thickness, then bake for 30 mins until lightly browned on top.
5. Remove and slide onto a chopping board, then reduce the oven to 160C/140C fan/gas
6. Cut the log into 1cm thick slices and return to the baking sheet, cut-sides up. Bake for 10-15 mins until crisp, then cool on a wire rack.
Will keep in a tin for 3 weeks.

Recipe :
Step by step video tutorial showing how to bake chocolate chip biscotti. I have added dessicated coconut to the recipe because I like the combination of coconut and chocolate. Biscotti is also known as cantuccini.
Biscotti makes a great gift. You can replace some of the plain flour for ground almonds if you prefer a strong almond taste.
