1 1/2 c Firmly-packed brown sugar 2/3 c Crisco shortening 1 tb Water 1 ts Vanilla 2 Eggs 1 3/4 c All-purpose flour 1/3 c Cocoa 1/4 ts Baking soda 1/2 ts Salt 12 oz Miniature semi-sweet -chocolate chips 1 c Chopped pecans 20 Caramels; (20 to 25) = unwrapped and halved 1. Pre-heat oven to 375F (190C). Place sheets of foil on countertop for cooling cookies. 2. Combine brown sugar, shortening, water and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture. 3. Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at low speed just until blended. Stir in chocolate chips. 4. Shape dough into 1 1/4-inch (3 cm) balls. Dip tops in chopped pecans. Place 2 inches (5 cm) apart on ungreased baking sheet. Press half caramel in center of each cookie. 5. Bake one baking sheet at a time at 375F (190C) for 7 to 9 minutes, or until cookies are set. DO NOT OVERBAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely. Makes about 4 dozen cookies -----

The Best Gooey Salted Caramel Brownies
CHOCOLATE CARAMEL COOKIES
COOKIE DOUGH 200 gr Maria biscuits 150 ml whipping cream 300 gr milk chocolate 75 gr chopped hazelnuts 5 gr cocoa powder
COATING Chopped hazelnuts
FILLING Caramel (Bebogeen)
TOPPING 100 gr milk chocolate
Heat the whipping cream in a saucepan until it begins to simmer. Add the finely chopped milk chocolate and let it sit for 1 minute. Stir until smooth.
Grind the Maria biscuits in a food processor, but not too finely.
Place the ground Maria biscuits in a deep bowl along with the chopped hazelnuts and cocoa powder. Mix well. Add the ganache and combine everything until it forms a cohesive mixture. Let the cookie dough rest for a while to firm up slightly.
Take 15 grams of the cookie dough and shape it into a small ball. Repeat this step.
Place some chopped hazelnuts on a plate. Roll the chocolate balls in the hazelnuts until coated. Repeat this step. Place the chocolate-hazelnut balls on a sheet of baking paper.
Using a baking ring or a cookie cutter with a diameter of 4 cm, press it gently on top of each chocolate-hazelnut ball to create an indentation. Do not press too deeply. Repeat this step.
Fill each indentation with a layer of caramel.
Melt the milk chocolate using a double boiler method. Transfer the melted chocolate to a piping bag or a sandwich bag.
Fill the indentations with a layer of melted milk chocolate. Place the chocolate-caramel cookies in the freezer for 30 minutes or until the chocolate has hardened.
Tips: Replace the hazelnuts with your preferred nuts. I used a cookie cutter with a diameter of 4 cm. Substitute the milk chocolate with your favorite type of chocolate.
