How To make Carob Cake
1 c White flour
1 1/4 c Whole wheat flour
1 ts Baking soda
1/4 ts Salt
1/2 c Carob powder (or cocoa)
1/2 c Sugar
1/2 c Corn oil
3/4 c Water
1 1/4 c Honey or maple syrup
1 tb Cider vinegar
2 ts Vanilla extract
Sift the flours together with baking soda, salt & carob. Stir in the sugar. In a large mixing bowl, stir together oil, water, honey, vinegar & vanilla until well blended. Add dry ingredients, mixing till well blended. Lightly oil & flour 2 8-inch cake pans. Divide batter equally between the two pans & bake at 350F for 20 minutes, or until the cakes test done. Cool for about 10 minutes then turn out onto wire racks to cool completely. Ron Pickarski, "Friendly Foods"

Carob Cake
Carob consumed by humans is the dried (and sometimes roasted) pod, and not the 'nuts' or seeds. Carob is mildly sweet and is used in powdered, chip, or syrup form as an ingredient in cakes and cookies, and in chocolate substitute. Chocolate contains theobromine, which is poisonous to some mammals, but carob does not, and is used to make chocolate-flavored treats for dogs.
This is a two layer carob cake with a cardamom & coconut cream filling. The icings is made from almond butter, maple syrup and carob.

Carob Banana BROWNIES with Coconut Manna Frosting - AIP, Autoimmune Protocol Recipes, Gluten-Free
This AIP brownie recipe substitute has minimal ingredients is grain-free and gluten-free, and totally AIP elimination phase compliant. These probably won't taste that great if you are still detoxing (or haven't detoxed) from refined sugar. I used unsweetened applesauce in these, but you could probably add a touch of honey if you wanted them to be a little sweeter. Makes 9 servings.
INGREDIENTS:
1/2 cup of organic unsweetened applesauce
1/4 cup of Chosen Foods avocado oil
3 very ripe organic bananas (the browner the banana the sweeter it will be)
1 cup of Pamela's tigernut flour
1/3 cup of Chatfield's carob powder
1 teaspoon of Hy-Vee baking soda
1/2 teaspoon of Redmond real salt
OPTIONAL INGREDIENTS:
Nutiva Squeezable Coconut Manna, shredded coconut, Hu Chocolate Gems
DIRECTIONS;
Mix all the ingredients listed above in a bowl.
Pour into an 8x8 glass baking dish.
Bake at 350 degrees Fahrenheit for 30 minutes. You may need to adjust this based on your oven. I think I should have placed mine on the lower rack because the top seemed to brown fast.
Cool completely before slicing.
You can add melted coconut manna as frosting and shredded coconut to the top if you want to dress it up. I thought it might be a cool idea if I drizzled the coconut manna over the brownies for the camera and now I regret it because well, it looks strange. But I didn't really feel like making another batch of brownies so I left it in the video. LOL
