How To make Carob Chip Cookies 2
1 1/4 c Whole wheat flour
1/4 ts Salt
1/2 ts Baking soda
1/3 c Butter or oil
1/3 c Honey
1 Egg, beaten
1 ts Vanilla extract
1 c Carob chips
1 c Chopped nuts
honey, egg and vanilla. Add the dry ingredients to the creamed mixture. Add the carob chips and nuts. Drop by teaspoons onto ungreased cookie sheet. Bake in a preheated 350 degree oven for 10 to 12 minutes. Makes 3 dozen. If they spread out too much when baking
refrigerate the dough before placing on cookie sheet. Walt MM

What is carob?
Carob taste similar to chocolate, if not better actually, and has some healthy benefits too. It is high in fiber and antioxidants, low in fat and sugar, and doesn't contain caffeine, dairy, or gluten. It is also higher in calcium than chocolate, making it a great snack to satisfy your sweet tooth!

Yes! The gluten free flour we use is one-to-one ratio, so just substitute your all purpose flour in the same amount for this recipe and you'll be good to go.

CAROB CHIPS COOKIES | Low Calories Cookies | Jackie Epstein
INGREDIENTS
1 Cup Salted butter
1 cup white (granulated) sugar
1 cup light brown sugar
2tsp. Pure vanilla extract
2pcs. Large eggs
3cups All purpose flour
1/2 tsp baking powder
1tsp baking soda
1tsp sea salt
2 cups Carob chips

If you are looking for an easy AIP Elimination Phase Compliant Chocolate Chip Cookie, this video is for you.
One of the ways I made AIP easy for me was by renovating recipes I already loved. My son has been asking for cookies we can enjoy together. This is the reno'd recipe that we came up with for a classic Chocolate Chip Cookie. I hope you all enjoy it as much as we do!

Chocolate Chip Cookies (AIP)
Makes about 16 cookies
2/3 Cup Shortening
1 Cup Coconut Sugar*
1/4 Cup Applesauce
1 tsp Vanilla
2/3 Cup Coconut Flour
1/2 Cup Cassava Flour
1/2 Tsp baking soda
1/2 tsp Salt
3/4 Cup Carob Chips**
1) With a mixer beat shortening and sugar together.
2) Add applesauce and vanilla - cream ingredients.
3) Add Coconut Flour thru Salt and mix well until dough forms.
4) Add Carob Chunks or Chips Fold into dough.
5) Scoop our medium size balls. Flatten by hand. A thicker cookie will be more cake like, a thinner cookie will be more crispy on the outside and chewy once cooled.
6) Bake for 8-10 minutes at 350F (if you leave the cookies thicker add a couple extra minutes.
7) Remove and cool on pan for 3-5 minutes, then transfer to wire rack to cool completely.
These are best when they are cooled.They are crumbly while hot but once cool the are firm like a regular cookie:)
Notes
* Use a finer ground coconut sugar if possible
** AIP Carob chips can be a bit hard to find. If you find them then use them otherwise make your own Carob chunks or chips with the following recipe:
Carob Chunks/Chips
1 Cup Coconut Oil
1 Cup Toasted Carob Powder
3 TBS Powdered Coconut Sugar
2 tsp Vanilla (alcohol free)
1/4 tsp Salt
Heat coconut oil over low heat (if it is too hot it will cause separation and wont be a smooth in the end. Mix in remaining ingredients and mix until smooth. In a parchment lined 8x8 dish spread mixture in evenly. Freeze until solid (15 minutes on average). Remove and cut into chunks. If you want precise chips Amazon sells a few different chocolate chip molds that you can use instead of the pan. One can be found here:
