INGREDIENTS:
* Carrot(गाजर) - 3 Piece/300 Grams
* Ghee(घी) - 1 Spoon
* Sugar(चीनी) - 1/2 Cup
* Thick Milk(गाढ़ा दूध) - 100 Gram
* Olive Oil(तेल) - 1/4 Cup
* White Flour/Maida(मैदा) - 1 Cup/Bowl
* Semolina(सूजी) - 2-2.5 Tbsp
* Baking Powder(बेकिंग पाउडर) - 1 Tsp
* Baking Soda(बेकिंग सोडा) - 1/2 Tsp
* Black Raisins/Blackberries(काली किशमिश/ब्लैकबेरी)
* Red Cherrie(चेरी)
* Tutti-Frutty(टूटी-फ्रूटी)
* Vinegar(सिरका) - 1 Tsp
RECIPE:
Keep the pan on the flame, place a steel ring in it. Cover it with a lid and keep it for pre-heating.
Take the Cake Tin, grease some Oil & dust some White Flour/Maida in it, and keep it aside.
Wash some Carrots, Peel them and grate them. Keep the pan for heating, add some Ghee, grated Carrot, Sugar, and cook it for 2-4 minutes, then turn the flame off & keep it for cooling down. In a bowl, add some Condensed Milk/Thick Milk/Milk Maid, some Olive Oil, and mix it well. Then keep the strainer on the bowl, put White Flour/Maida, Semolina, Baking Powder, Baking Soda, and sieve them. Whisk it with the hand whisker. Then put cooked Carrot and mix it well. Then add some Blueberries, Cherries, Tutti-Frutti and mix them all well. Then transfer the Batter to the Cake Tin, tap it 3-4 times. Keep it in the preheated pan and Bake the Cake for 35-40 mins on slow flame. Check the Cake & turn the flame off & keep it cooling down. Take out it & demold it and cut the cake into pieces. Serve it and enjoy the Tasty Carrot Cake.
Tip:
* Use all the ingredients at room temperature.
* Bake the Cake in the Preheat microwave on convection mode at 180 degrees for 35-40 Minutes

Eggless Carrot Cake | Quick & Easy Dessert Cake Recipe | Beat Batter Bake With Priyanka

Ingredients:
Flour- 1 ½ cup
Baking Soda - 1tsp
Baking powder -2 tsps
Condensed milk – 3/4th cup + 1tbsps
Buttermilk – 3/4th cup
Oil – 1/3rd cup
Cinnamon – tsps
Nutmeg – 1/2tsps
Castor Sugar – ½ cup
Brown sugar – ½ cup
Grated carrot – 1 cup (can add more upto 2 cups)
Raisins – handful (soaked with water for an hour)
Baking 10 mins at 200
160- 30 mins
Hung curd – 1cup
Method:
- Pre heat the oven at 200 degree celcius. Butter a 10 inch rectangular baking tin
- Sift flour, Baking soda, baking powder in separate bowl.
- Whisk together condensed milk, buttermilk, sugar, oil and spices (nutmeg, cinnamon)
- Mix this with the dry ingredients
- Finally mix grated carrot and raisins (without water)
- Scrap butter in the prepared tin and bake at 200 degree celcius for 10 minutes. Then further at 160 degree celcius for 30 minutes until baked
- Remove from the oven, let it cool down in the mold for 10 minutes. Demold and cool it off on a rack.
- Serve with lightly whipped hung curd (if sour, add bit Castor sugar and whisk)
