how to make cowboy caviar dip ????
I've been making cowboy caviar dip (also known as Texas caviar) for a couple of years and with it's recent popularity, I thought I show off my take on it!!
Ingredients:
black beans, tomatoes, onion, sweet peppers, jalapenos, cucumber, avocado, corn (preferably cut off the cob but canned works), garlic, lime juice, white vinegar, taco seasoning, chili powder, salt, pepper

This dip has to be one of my most popular party recipes. I double or triple the recipe for social gatherings because it gets devoured very quickly!
Texas Cowboy Caviar makes a great addition to any BBQ, game night or luncheon.....it is quick to make and everyone loves it!

TEXAS COWBOY CAVIAR
1 can yellow corn, drained
1 can black-eyed peas, rinsed and drained
3-4 chopped Roma tomatoes, seeds removed
1 bunch fresh cilantro leaves, chopped
2 avocados, avoid overly soft ones
2 cloves garlic, minced
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
3/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon cumin
Mix corn, black-eyes peas, tomatoes, avocado and cilantro in a large bowl. Add red wine vinegar, olive oil, salt, pepper and cumin and stir to combine.
Refrigerate in air tight container if not serving right away.
Serve with corn chips or tortilla chips and ENJOY!

Cowboy Caviar Dip Recipe:
Ingredients:
- 1 (15 oz.) can low sodium black beans, drained and rinsed
- 1 (10 oz.) can fire roasted diced tomatoes, drained
- 1 cup corn
- 1 cup red onion, chopped
- 1 bell pepper, diced
- 1/3 cup chopped cilantro
- 1 lime, juiced
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- 1 tsp. chili powder
- 1 tsp. cumin
Directions:
1. Combine black beans, fire roasted tomatoes, corn, onions, bell peppers and cilantro in a large bowl. Toss well.
2. In a separate bowl, whisk together lime juice, olive oil, honey, chili powder and cumin to create a dressing.
3. Pour dressing over the black bean mixture. Toss to combine.
4. Refrigerate for at least two hours before serving..

2 roasted red peppers (or 1 bell pepper well chopped)
1/3 cup red onion
1/2 jalapeño (more if you like it spicy!)
1/3 cup chopped cilantro (aka coriander)
Optional: 1 avocado
Juice of 1-2 limes (I used 1)
1/4 tsp. salt
1/2 tsp. chili powder
1 clove garlic, minced

REASONS WHY THIS TEXAS CAVIAR RECIPE WORKS:
I first came across black bean and corn salsa cowboy caviar recipe a few years ago while surfing the internet for side dishes for my upcoming BBQ gathering. I was curious when I came across a similar recipe because the ingredients reminded me of an actual Haitian meal, CHAKA.
I altered the recipe a bit by adding my own touch to it. This recipe has now become a staple in my home for small gatherings. This cowboy caviar or Texas caviar has been requested so much; I can now make it with my eyes closed.
The acidic flavors from the lime and the white wine vinegar, along with the sugar, gave this side dish a savory sweet richness.
It is a simple recipe that can be made quickly or ahead of time.
This recipe is also delicious with BBQ meats, hence the reason why I sometimes pair it with my BBQ Chicken recipe.
Goes well with plain tortilla chips.
When prepared ahead of time, it allows the opportunity for the flavors to fully settle.
This Texas salad refrigerates and reheats well.
