2 (15.8 oz) cans black-eyed peas, drained
2 (11 oz) cans white shoe-peg corn, drained
2 (28 oz) cans Rotelle Tomatoes with Chilis, drained
1 large green pepper, diced small
1 large red pepper, diced small
1 jar banana peppers, chopped slightly
1/2 cup green onions, sliced
16 oz bottle Zesty Italian Dressing
In a large bowl, gently stir together the first seven ingredients. Pour dressing over vegetables and gently stir to coat evenly. Refrigerate and allow to marinate overnight. Serve with tortilla chips for dipping.

You NEED to try my Texas Caviar recipe. So easy and delicious ???? #shorts
Texas caviar also known as cowboy caviar has been the latest viral trend. I like to call it a summertime salsa but the name originated in 1940’s and was created by Helen Corbitt in the state of Texas and became a popular viral trend by Bria Lemirande on TikTok. Helen Corbitt was a head chef at the time working under Neiman Marcus and was asked to create a menu using only Texas products. It became so popular that Neiman even sold it in stores. This particular recipe is not the traditional recipe it’s just my modern take on it. This is also hands down one of the best salsa recipes out there. It is so incredibly addictive that you won’t be able to stop eating it and it’s worth all the hype. My take on it is a little different but incredibly delicious and refreshing. It can be enjoyed with tortilla chips, on its own, on rice, on tacos, or with seafood. It’s so versatile and you can practically add anything you enjoy.
INGREDIENTS:
For the Dressing
⅓ cup olive oil
2 tablespoons white balsamic vinegar or red wine vinegar
juice of two limes
tablespoon of agave or honey
salt to taste
For the Salsa
1-2 diced mango’s I used one very large one
½ red bell pepper
½ green bell pepper
½ yellow bell pepper
1 finely chopped hot poblano pepper or 2 jalapeños are optional for spice
1 finely chopped tomato
1 cup of corn frozen and thawed grilled, or canned
1 15 oz can of organic black beans rinsed and drained
1 15 oz can of organic cannellini beans rinsed and drained
handful of finely chopped parsley or cilantro

Easy, healthy, WFPB (and vegan!) Cowboy Caviar! This dip (or salad) is perfect for taking to BBQ's, serving at parties, or even just enjoying yourself on a summer afternoon. This dip goes perfectly with oil-free, crispy tortilla chips (see vid link below!) or enjoyed solo as a salad. So easy to make, yet delicious enough to taste like you spent hours making it. 1 cup black eyed peas
1 cup black beans
1 cup chopped tomatoes
1 cup corn (fresh, frozen, canned or fire roasted!)
2 roasted red peppers (or 1 bell pepper well chopped)
1/3 cup red onion
1/2 jalapeño (more if you like it spicy!)
1/3 cup chopped cilantro (aka coriander)
Optional: 1 avocado
Juice of 1-2 limes (I used 1)
1/4 tsp. salt
1/2 tsp. chili powder
1 clove garlic, minced

This dip has to be one of my most popular party recipes. I double or triple the recipe for social gatherings because it gets devoured very quickly!
Texas Cowboy Caviar makes a great addition to any BBQ, game night or luncheon.....it is quick to make and everyone loves it!

TEXAS COWBOY CAVIAR
1 can yellow corn, drained
1 can black-eyed peas, rinsed and drained
3-4 chopped Roma tomatoes, seeds removed
1 bunch fresh cilantro leaves, chopped
2 avocados, avoid overly soft ones
2 cloves garlic, minced
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
3/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon cumin
Mix corn, black-eyes peas, tomatoes, avocado and cilantro in a large bowl. Add red wine vinegar, olive oil, salt, pepper and cumin and stir to combine.
Refrigerate in air tight container if not serving right away.
Serve with corn chips or tortilla chips and ENJOY!
