4 1/2 c Flour; all purpose
2 ts Sugar; granulated
1 ts -salt
1 tb Fleishmann's instant yeast -
1 1/4 c Cheddar cheese; shredded
1 2/3 c Milk
1/3 c Dijon mustard
Coarse salt; optional Sesame or poppy seeds; opt Reserve 1 cup flour. In large bowl, combine remaining flour (3 1/4 c), sugar, salt, yeast and cheese. heat milk and mustard until very warm (about 125F) and stir in dry ingredients. Mix in enough reserved flour to make soft dough that does not stick to bowl. Knead on lightly floured surface until smooth and elastic, about 8 minutes. Cover and let rest on floured surface 10 minutes. Divide dough into 16 equal pieces. Roll each piece into 20 inch rope. On lightly greased baking sheets, shape into pretzels; curve ends of each rope to make circle, cross ends at top, twist ends once and lay over bottom of each circle. Cover and let rise in warm, draft-free place 15 minutes. Brush tops with water and sprinkle with coarse salt and sesame or poppy seeds, if desired. Bake in preheated 375F oven 12 to 15 minutes or until golden. remove pretzels to cooling racks.

1 1/2 cups freshly shredded cheddar cheese
1/2 cup freshly shredded Gruyere Cheese

Homemade Soft Pretzels with a Beer Cheese Dip
Making soft pretzels at home is NOT HARD!! It’s wayyy easier than you think and the reward is amazing. Using very few ingredients that you most likely already have at home, you can be a soft pretzel pro! Pair them with my beer cheddar dip and you will be the coolest kid on the block!

| Ingredients |
Dough:
2 ½ Cups All-Purpose Flour, Plus extra for kneading
1 Cup Whole Milk
1 Package Active Dry Yeast
3 Tablespoons Brown Sugar, Packed
2 Tablespoons Butter, Melted
1 Teaspoon Salt
Soda Bath:
1/3 Cup Baking Soda
3 Cups Warm Water
2-3 Tablespoons Course Salt for Topping
Beer Cheese Dip:
3 Tablespoons Butter
3 Tablespoons All-Purpose Flour
¾ Cup Whole Milk
½ Cup Beer, Any beer will do
1 Teaspoon Dijon Mustard
½ Teaspoon Garlic Powder
2 Pinches of Cayenne Pepper
3 Cups Shredded Sharp Cheddar Cheese

Pretzels:
In a small bowl, warm the milk to a temperature of 110 degrees. Add a teaspoon of the brown sugar and the package of yeast. Give a gentle stir and allow the yeast to activate, around 5 minutes or until foamy.
Once the yeast is activated, add the remaining sugar, salt, melted butter, and stir to combine. Add about ¼ cup of the flour to the wet ingredients and mix. Finally add all of the wet ingredients to the remaining flour to form a sticky dough. Knead by hand or with a standing mixer for 5 minutes until the dough is smooth and slightly tacky. If the dough is too sticky, sprinkle more flour and knead until smooth.
Shape the dough into a ball, place it into a lightly greased bowl and cover with plastic wrap. Allow to rise in a warm place for 1 hour or until it has doubled in size.
Preheat the oven to 450 degrees and line a baking sheet with parchment paper.
Punch the dough to deflate it, then turn it out onto a lightly floured surface. Divide the dough into 6 pieces. Roll each piece of dough out into a 30-inch rope, using your hands. * If the dough slides and you have trouble rolling…you may have too much flour on the board. Use a little water to make your hands damp and then try again.
Form each rope into a pretzel shape.
Dissolve the baking soda in warm water. Gently dip each pretzel in the solution, then place onto baking sheet. Sprinkle with coarse salt. Bake until golden brown, about 10-12 minutes.
Beer Cheese Dip:
In a medium sauce pan over medium heat, melt butter. Add flour and mix constantly for about 2 minutes. Add milk and beer being sure you whisk out all the clumps.
Add Dijon mustard, garlic powder, cayenne pepper, and a pinch of salt. Allow to cook for 5 minutes or until the mixture thickens.
Add the cheddar cheese and mix well until cheese is fully melted.

Soft Pretzel Bites Ingredients :
- 1/2 cup Milk
- 1/4 cup Water
- 1 tbsp Brown Sugar
- 1/2 packet of Yeast (1 1/8 tsp)
- 1 cup Bread Flour
- 1 cup All- Purpose Flour
- 1 tsp Salt
- 1 1/2 tbsp melted Butter
- Pretzel Salt (for topping)
*Tips:
- Boil Pretzels in a Baking Soda Bath prior to baking for a shiny crust. This gadget makes the process easy and fast!
- This bench scraper is very helpful to slice the perfectly sized pretzel bites with your dough!
- Pretzel Salt is optional, however kosher salt melts into your pretzel during baking and loses its texture. For best taste results, I recommend Pretzel Salt
Baking Soda Bath: (do this process prior to baking)
- 1/3 cup Baking Soda
- large pot of boiling Water
Egg Wash:
- 1 Egg Yolk
- 1 tbsp Water
