How To make Cheesecake, Lowfat
Ingredients

cream cheese, fat-free, packages, softened
3/4
cup
sugar
1
teaspoon
vanilla
3
each
eggs
4
each
graham crackers, lowfat, whole, crushed
5
teaspoon
sugar
1
cooking oil spray
Directions:
Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until just blended. DO NOT OVERMIX AFTER ADDING EGGS. Mix graham cracker crumbs with 2 tablespoons sugar. Spray a 9 inch pie plate with cooking spray; sprinkle crumb mixture over bottom and sides. Pour cream cheese mixture into pie plate.
Bake at 325 degrees for 45 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Top with fruit or pie filling if desired.

Ingredients:
Makes about 8-10 servings
Cookie Crust
7 oz (200g) refined sugar free cookies or graham crackers
1/4 cup (60g) melted butter(or coconut oil)
Refined Sugar Free Yogurt Cream Cheese Filling
1 pound (450g) light cream cheese, room temperature
1 pound (450g) 2% fat Greek yogurt
1/2 cup (150g) honey or maple syrup
1/4 tsp (1g) salt
3 eggs, room temperature
lemon zest from 1 lemon
2 tsp (10g) vanilla extract
2 tbsp (16g) cornstarch
Refined Sugar Free Strawberry Sauce
9 oz (250g) fresh or frozen strawberries
1/4 cup (60ml) orange juice
2-3 tsp honey or maple syrup, optional

A cheesecake slice has about 350-400 calories while this version has only 50 CALORIES PER SLICE AND 200 FOR THE WHOLE CAKE!

Low fat greek yogurt: 4-5 tablespoons (60 grams)
Low fat cream cheese: 3 tablespoons (42 grams)
Zero calorie sugar: 2 tablespoons
Low calorie cookies for the crust
Add a teaspoon of lemon juice if you like sour cream in your cheesecake.
IMPORTANT:
If the cheesecakes are not holding their shape, pop them in the freezer overnight (like many other cheesecakes) or you can add 2-3 tablespoons of whipped cream for them to hold their structure. Doing this will add 100 calories to the total calorie count which is about 450 or you can simply make them in dessert cups. Adding LEMON JUICE will also help it hold it's structure so you can do that too. If you want be completely stress free, simply make them in dessert cups.
Make sure to use thick, low calorie yogurt.

Use mini cupcake liners and you will have 8 cheesecakes.
Use regular liners and you will have 6 cheesecakes so the calorie count may vary per serving.
