This chili cheese dip recipe is cheesy, meaty, and zesty, made with the greatness of roasted Hatch chiles, cheddar, Monterrey Jack cheeses, and plenty of seasoning. Bust out the chips, it's party time! You're going to need to make a double batch!

THINGS YOU’LL NEED:
1 tablespoon olive oil
1 medium onion chopped
1 jalapeno pepper chopped - or use a small fresh Hatch chile of choice
2 cloves garlic chopped
1 pound ground beef
6 ounces roasted Hatch chili peppers, chopped – I used a medium-hot variety (Sub in a variety of serrano, jalapeno, and bell peppers if you can't obtain Hatch peppers)
14-ounce can of chopped tomatoes
1 teaspoon red chili powder
1 teaspoon dried basil
1 teaspoon cumin
Salt and pepper to taste
1 cup shredded cheddar cheese
1 cup shredded Monterrey Jack cheese
Chopped fresh herbs and chips for serving

Cheesy Chili Tater Tot Casserole
For the full recipe:
Ingredients
1 pound ground beef
1 ( 28 oz.) can crushed tomatoes
1 ( 15 oz.) can diced tomatoes, undrained
1 ( 15 oz.) can kidney beans, drained
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 teaspoons ground cumin
1 tablespoon chili powder
1 ( 36 oz.) bag frozen tater tots
2 cups shredded cheddar cheese
INSTRUCTIONS
Preheat oven to 350 F. Brown ground beef in a large saucepan over medium heat, breaking it up with a spatula as it cooks. Drain grease and return meat to skillet.
Add in crushed tomatoes, diced tomatoes, kidney beans, salt, pepper, cumin and chili powder. Let mixture simmer over medium heat for another 10-15 minutes. Spread chili mixture out into a large greased baking dish.
Spread tater tots over the chili in one single layer. Sprinkle shredded cheddar cheese over tater tots. Bake for 40-45 minutes.

Method
1. Cut the cheese into long cylindrical shapes
2. Make slits onto the chilis and stuff them with cheese
3. To make the batter, mix corn flour, plain flour, salt, paprika, italian seasoning and pepper
4. Add water and mix it to a batter-like consistency
5. Dip the cheese stuffed chilies in the batter
6. And roll them in breadcrumbs
7. Fry them till they are golden brown in color
8. Serve them hot with ketchup

Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
