????????It’s pie season guys and that means one thing.. SHE’S MY CHERRY PIE!! ???????? Super flaky buttery pastry with the most delicious, sweet, sticky cherry filling topped off with a pastry lattice - DIVINE! We used an 8 enamel pie dish:
CHERRY FILLING
1000g (pitted) cherries cut in half
60g light brown sugar
1/2 lemon juice
(5-6 mins)
65g caster sugar
25g cornflour
¼ tsp sea salt
1/4 tsp almond extract
3/4 tsp vanilla extract
PASTRY
380g plain flour
¾ tsp salt
255g unsalted butter - chopped and in the fridge or freezer for 10 mins.
1 tbsp cider or white wine vinegar
8 - 8/12 tbsp cold water - (put ice cubes in it)
EGG WASH
1 egg
1 tbsp milk

Cherry Compote Recipe (Thanksgiving Tip: Substitute Cranberries) Perfect w/ yogurt, cheesecake, etc.
Fresh, ripe cherries simmered with a pinch of sugar, cornstarch & lemon juice to create a thick cherry topping. It's the perfect topping for a cherry cheesecake or with yogurt, ice cream, waffles, pancakes & more!
**For Thanksgiving: substitute cranberries instead of cherries, orange instead of lemon and add a bit more sugar! Delish!
Cherry Pie Filling / Cherry Filling for Black Forest cake / Cherry Compote
Homemade Cherry Pie Filling is easy to make and so much better than store bought ones! This pie filling comes together in under 30 minutes, and is perfect for all your summer treats. Use it as a filling in your baked goods, with your favorite breakfast, as a topping on a cheesecake, or parfait.

¡uʍop ǝpısdn ???? Black Cherry Upside Down Cake Recipe This upside down cherry dessert recipe uses cherries left over from our Black Cherry Soda Pop recipe: But you could use either fresh cherries or frozen cherries to make this stunningly tasty cherry cake. So ditch that old Black forest cake recipe... for this amazing upside down cherry cake recipe.
Topping:
500g cherries
30 mL (2 Tbsp) sugar
30 mL (2 Tbsp) butter, melted
Cake:
125 mL (½ cup) butter
250 mL (1 cup) sugar
3 eggs
500 mL (2 cups) all-purpose flour
10 mL (2 tsp) baking powder
2 mL (½ tsp) coarse salt
2 mL (½ tsp) baking soda
250 mL (1 cup) plain yogurt or sour cream
Method:
Preheat oven to 220ºC (425ºF).
Grease a 9 cake pan and line with parchment paper.
Make topping:
Mix cherries, sugar and butter in the cake pan and place in oven for 35 minutes.
When cherries are cooked remove pan from oven and lower oven temp to 180ºC (350ºF).
When the topping is cooked, make the cake:
Cream together butter and sugar until light and fluffy.
Cream in the eggs one at a time.
Whisk together dry ingredients in mixing bowl.
Alternate beating in yogourt and flour mixture.
Mix just until last of flour is mixed in.
Transfer batter to cake pan.
Bake for about an hour, or until a tester comes out clean.
Unmold while still warm.
