Chewy Molasses Ginger Cookies | How to make Molasses Cookies
This cinnamon wreath bread is made up of a soft and fluffy yeast dough with a gooey and sticky cinnamon sugar filling, all topped with a sweet icing. Bonus: it's shaped like a beautifully festive wreath!

Ingredients
2 & 1/2 cups all-purpose flour
1/4 teaspoon salt
1 & 1/2 teaspoons baking soda
1 & 1/2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
3/4 cup (1 & 1/2 sticks) unsalted butter, softened to room temperature
1/3 cup packed brown sugar, light or dark * see notes
1/3 cup granulated sugar
1 large egg
1/4 cup unsulphered molasses
More granulated sugar (for rolling)
Instructions
In a medium bowl, combine flour, salt, baking soda, and ground cinnamon, ginger, and cloves. Whisk together to combine. Set aside.
In a large bowl, combine, butter, brown sugar, and granulated sugar. Cream together until the sugars are fully dissolved in the butter and the mixture is slightly fluffy (about 2 minutes with electric beaters on medium speed or 5 minutes by hand).
Whisk the egg into the butter sugar mix until just combined. Add the molasses, and beat all the ingredients together until fully incorporated and smooth. Add the dry ingredients in about 2 to 3 additions, mixing well after each addition, until you no longer see any dry spots of flour. Cover the dough and chill for 1 hour.
Preheat your oven to 350°F. Line 2 large baking sheets with parchment paper or silicone baking mats, and set aside.
Uncover the chilled cookie dough. Scoop out about 1 tablespoon of cookie dough and roll into a ball with your hands. Roll the ball of dough in more granulated sugar and position on the prepared baking sheet (leave about 1 inch between each cookie to let it expand). Repeat until all of the dough is used up.
Bake in the center of your preheated 350°F oven for 12 to 15 minutes, or until the cookies have spread out and appear dry on the surface. The tops should also crackle slightly. Cool for 5 minutes on the baking sheet, then transfer to a cooling rack to cool completely.

Old Fashioned Soft & Chewy Molasses Cookies Recipe - Today's Old Cookbook Show recipe comes from a depression era cookbook published in 1935. This molasses spice cookie recipe produces a soft chewy ginger spice cookie with a deep molasses flavour.
Ingredients:
½ cup shortening
½ cup sugar
1 egg
¾ cup molasses
¼ cup milk
2 ¾ cup flour
2 tsp baking powder
½ tsp soda
¾ tsp cinnamon
¼ tsp ginger
½ tsp salt
Method:
Cream shortening and sugar together.
Add beaten egg, molasses and milk and mix well.
Sift dry ingredients together and add to the first mixture.
Mix well.
Drop by teaspoons on a greased baking sheet and flatten with the back of a spoon.
Bake in a moderate oven (350ºF) about 12 minutes.
For parties decorate with a sugar frosting.

Ultimate Ginger Cookies

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 1/2 teaspoons ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon kosher salt
1 cup dark brown sugar, lightly packed
1/4 cup vegetable oil
1/3 cup unsulfured molasses
1 extra-large egg, at room temperature
1 1/4 cups chopped crystallized ginger (6 ounces)
Granulated sugar, for rolling the cookies
Directions
Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
In a large bowl, sift together the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt and then combine the mixture with your hands. In the bowl of an electric mixer fitted with the paddle attachment, beat the brown sugar, oil, and molasses on medium speed for 5 minutes. Turn the mixer to low speed, add the egg, and beat for 1 minute. Scrape the bowl with a rubber spatula and beat for 1 more minute. With the mixer still on low, slowly add the dry ingredients to the bowl and mix on medium speed for 2 minutes. Add the crystallized ginger and mix until combined.
Scoop the dough with 2 spoons or a small ice cream scoop. With your hands, roll each cookie into a 1 3/4-inch ball and then flatten them lightly with your fingers. Press both sides of each cookie in granulated sugar and place them on the sheet pans. Bake for exactly 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for 1 to 2 minutes, then transfer to wire racks to cool completely.

Best Ever Chewy Spiced Molasses Cookies! | Christmas Holiday Chewy Spiced Cookies
Nothing says Christmas time in our house than baking Christmas Cookies!! And one of our favorites is Chewy Spiced Molasses Cookies. Very similar to a Ginger Chewy Cookie without the ginger, but still with lots of yummy holiday sweet spices! These cookies are so delicious and super easy to make! They stay soft and chewy for days (if you keep them in an airtight container of course) and they freeze very well, if you want to save some for a later date. Holly's Chewy Spiced Cookies:
½ cup (1 stick) butter
¾ cup sugar, plus more for coating
1 large egg
1 ½ cups all-purposed flour
½ tsp. Nutmeg
½ tsp. cinnamon
¼ tsp. ground cloves
¼ tsp. salt
1 tsp. baking soda
¼ cup molasses
Pre-heat over to 350 degrees Fahrenheit. Line baking sheet with parchment paper.
Using a Kitchen-aid (or hand mixer), cream together butter and sugar in a large bowl until light and fluffy, about 3 minutes. Add egg and blend well.
Add flour, nutmeg, cinnamon, ground cloves, salt, baking soda, and molasses and mix until dough is combined. Use a scoop to portion out the dough ball (about 1 TB. each). Roll in sugar and place on cookie sheet about 2 inches apart.
Bake 9 – 10 minutes or until set. Cool completely, storing any leftover in an airtight container. Enjoy!
