How To make Chick Peas and Sesame Paste
1 1/2 c Chick peas, cooked
4 tb Lemon juice
2 Garlic cloves
4 tb Olive oil
Stock from chick peas 2 tb Parsley, chopped
1/2 ts Coriander
1/2 ts Salt
1/4 ts Black pepper
4 ts Sesame paste
1/2 ts Paprika
Parsley to garnish Chick peas should be overcooked. Reserve liquid. Put chick peas with 1/2 c liquid in blender. Mash well. Blend with other ingredients except sesame paste, paprika & additional parsley. In a small bowl, mix the sesame paste with a little more of the reserved stock. Add to belnder & mix briefly. Ingredients for Sesame Chicken:
300 gm Chicken Thigh
Grated Garlic - 1 Clove
Light Soy Sauce - 1 Tablespoon
A pinch of salt
Black pepper powder - 1/2 Teaspoon
1 egg white
Cornstarch - 2 Tablespoon
Honey - 2 Tablespoon
Sugar - 1 Tablespoon
Light Soy Sauce - 2.5 Tablespoon
Water - 3 Tablespoon
Ketchup / Tomato Sauce - 2.5 Tablespoon
White Vinegar - 1 Tablespoon
Sesame Oil - 1 Tablespoon
Cornstarch
Toasted Sesame Seeds
Green Onions
Oil for deep frying
Tips:
1. It is best to fry the chicken in 2 batches without overcrowding the wok so that the temperature of the oil would not drop.
2. If you prefer a stronger sesame flavor, add few drizzles of sesame oil after adding the fried chicken into the sauce and stir quickly.
3. This crispy sesame chicken is best to serve immediately after cooking.

3-Ingredient Chinese Sesame Paste
Serve: a small jar
Chinese sesame paste can be a bit hard to find in Brisbane so why don’t we make it? It’s really easy and straightforward!
Ingredients:
¼ cup of sesame seeds
2 tbsp of sesame oil
a pinch of salt
Steps:
1. Set a pan or wok on medium heat. Toast the sesame seeds until brown for about 3-5 minutes. The sesame seeds can burn easily so make sure to stir and keep checking.
2. Once the sesame seeds are toasted, let it cool.
3. Blend the sesame seeds with sesame oil and salt.
4. This sesame paste can be used as a noodle seasoning, dressing, or a dip. You can store the sesame paste in an air tight container in the fridge for up to 4 weeks. There you go!
