Sauce
2 tablespoons fish sauce-
2 tablespoons packed brown sugar-
¼ tsp. ground black pepper-
Add sauce ingredients in a small bowl and mix until combined. Set aside.
Cook Chicken
1 pound chicken, skin on, cut into 2-inch pieces
½ teaspoon turmeric powder-
½ teaspoon salt-
¼ teaspoon mushroom seasoning-
1 tablespoon vegetable oil-
3 tablespoon minced lemongrass-
2 tablespoons minced garlic-
1 teaspoon minced Thai chili-
1 large shallot; sliced-
2 tablespoons dry white wine
1 teaspoon dried chili flakes (optional)-
1. Add turmeric, salt and mushroom seasoning in a shallow dish and mix to combine. Spread seasonings all over the inside of the dish and coat chicken pieces evenly with the seasonings.
2. In a large pan, add in oil swirl to coat inside of pan and turn on high heat.
3. When oil is hot, add chicken skin side down. Cook for 5 minutes or until skin is golden brown, turn chicken to cook on the other side for about 2 minutes or until chicken is fully cooked. Transfer chicken to a plate and turn off heat.
4. Remove oil left in pan with paper towel reserving about 2 tablespoons of oil.
5. Turn stove on high heat and add lemongrass, minced chili, shallot and garlic into pan stir frying for about 1 minute or until fragrant.
6. Add in chicken and toss with aromatics for about 2 minutes to combine with chicken. Then pour in wine and sauce that was made earlier stir frying for about 1 minute with the chicken to coat with sauce.
7. Turn off heat and sprinkle with chili flakes for extra spice.
Assemble
Cilantro leaves
Cucumber slices
Steamed white rice-
Transfer chicken on serving platter, garnish with cilantro and serve with steamed rice and cucumber slices.

SPICY LEMONGRASS CHICKEN || VIETNAMESE GA XAO SA OT
Let’s make Vietnamese SPICY LEMONGRASS CHICKEN (Gà xào sả ớt) today! It is a very popular dish in Vietnamese kitchens, and it goes very well with steamed Jasmine rice. I still remember whenever I came home from school, no matter how tired I felt, I suddenly felt super awake smelling it from the kitchen. It’s so simple to make, and of course the main ingredient is.... THE LEMONGRASS!! It’s a very commonly used ingredient in Vietnamese and South East Asian kitchens, from soup to salad, and to especially meat dishes because it gives a nice lemony scent and a refreshing citrus flavour!
I used deboned chicken thigh & leg, but of course feel free to use other parts of the chicken if you prefer.
INGREDIENTS:
- 600g of boneless chicken thigh & leg
- 3 stalks of lemongrass, 1 shallot, 4-5 cloves of garlic
- ½ tbs turmeric powder, ½ tbs salt, ¾ tbs fish sauce, ½ tbs sugar
- Optional: 6-7 bird’s eye chili (for the spicy kick) and 2-3 green chili (for the aromas)
STEPS:
1. Mince lemongrass, shallot, garlic and chilies separately. Set aside.
2. Cut chicken into large cubes.
3. Marinate the chicken with ½ tbs of each: turmeric, salt, lemongrass, garlic, shallot and ¼ tbs of minced chili. Set aside for 20 mins.
4. On a hot pan, add oil and add chicken cubes to sear them. Don’t stir fry them, let them brown on one side first, then flip to the other side.
5. After chicken is cooked, add the remaining lemongrass, shallot and chili. Mix and cover to let it cook for 2 mins.
6. Remove lid, add the remaining garlic. Mix well and cook for another 1-2 mins. Add ¾ tbs fish sauce and ½ tbs of sugar. Mix well and off the heat.
7. Serve over steamy hot white rice, with cucumber and pickled radish & carrots.

I love this recipe because it is so good on top of Jasmine rice or Banh Mi(Vietnamese sandwich) and also I can make with pork, it works perfectly as well! If you are a vegetarian, no worries, you can make this with fried tofu! Superb!!!

Lemongrass Chicken Ingredients
Serves 2
4 Chicken thighs, boneless, skin on (Approximately 1 lb.)
1/2 Stalk of lemongrass (using only bottom white part, approximately 2 1/2 Tbs.)
4 Cloves garlic
2 Thai chili
1 Shallot
2 Tbs. cooking oil
For the Sauce
2 Tbs. Fish sauce
2 Tbs. Sugar
1/4 tsp. Black pepper
To Serve with
Cilantro leaves
Warm cooked Jasmine rice
Cucumber slices
