Chicken Marsala with Mushrooms

Ingredients
One 4- to 5-pound chicken (organic and free range, if possible), cut into 10 pieces
Kosher salt and freshly ground black pepper

3 tablespoons canola or vegetable oil
4 cups sliced white button mushrooms
2 cloves garlic, minced
1/2 medium onion, finely diced
1 tablespoon tomato paste
3 sprigs fresh thyme
1 cup dry marsala
1 1/2 cups low-sodium chicken broth
4 tablespoons unsalted butter, chilled, cut into cubes
Juice of 1/2 lemon
2 to 3 tablespoons chopped fresh Italian parsley
Chardonnay, for serving
Directions
Preheat the oven to 375 degrees F. Pat the chicken pieces dry with a paper towel and sprinkle all over with salt and pepper. Set a turkey roaster pan over 2 burners on medium heat and add the canola oil. Brown the chicken, skin-side down first, 3 to 4 minutes, then turn and brown on the other side, 2 to 3 minutes longer. Remove from the pan and set aside.
Add a little more of the oil to the pan on high heat and add the mushrooms, garlic and onions. Season with salt and cook just long enough to get some color on the mushrooms, 2 to 3 minutes. Stir in the tomato paste and thyme and cook about 1 minute longer. Place the chicken pieces back into the pan skin-side up and spread them out evenly, pushing them down into the mushrooms and onions. Add the marsala, scraping up the brown bits from the bottom of the pan, and add the chicken broth. Place the whole pan in the oven and cook until the tops of the chicken are golden brown, 30 to 35 minutes.
Use tongs to remove the chicken from the pan and transfer onto a serving platter and keep warm. Set the roasting pan back over the burner on high heat. Bring the contents to a boil and cook the liquid until it is reduced and the flavors become concentrated, 3 to 4 minutes. Shut off the heat, add the butter cubes and stir gently to melt the butter evenly. This will thicken the marsala sauce and give it a rich flavor. Taste and season with salt and pepper. Add a squeeze of the lemon juice and fold in the parsley. Pour over the chicken and serve with Chardonnay.

2 boneless skinless chicken breasts
1 cup all purpose flour
1/4 cup avocado or olive oil
8 oz porcini or Bella mushrooms
1/2 cup marsala wine
1/2 cup chicken stock
1/4 cup heavy cream
1 tbs minced garlic
1 diced shallot
4 tbs butter
1/2 tsp browning
1-2 tsp better than bouillon Chicken Base
AP Seasoning, Italian Seasoning, cayenne pepper, Chopped parsley
Directions:
Using a meat tenderizer, flatten the chicken breasts until they are even (about 1/4 inch thick) - You can place them between some plastic wrap and flatten them. Season the chicken with salt, pepper, garlic, onion powder.
Add flour to mixing bowl and season to taste. Lightly coat the chicken breast with flour and set aside while you get your pan hot.
Heat oil in large skillet and add 2 tbs butter. Add chicken and fry for 3-4 minutes per side or until golden brown. Remove the chicken to a plate for later.
Drain all but 1 tbsp of oil from skillet. Reduce heat to medium and add in mushrooms, shallots, and garlic. Season as you go. Cook this mixture for 3-4 minutes until the mushrooms are nicely browned. Pour in the marsala and increase heat to bring to a boil. Allow the alcohol to cook off a bit. Reduce heat to a simmer and add in chicken stock and cream. Add in remaining butter and mix together. Season as needed and add your chicken back to the sauce. Baste with sauce and mushrooms and cover and cook until the chicken hits 165 internal temp. (Use the browning as needed to darken the color of your sauce if desired.) Garnish with fresh parsley and serve over rice, mashed potatoes, or pasta.

1 ½ lb. Chicken Breast (Chicken Tenders)
1 cup Flour + 1 tsp Salt + ½ tsp Black Pepper
Olive Oil

1 clove Garlic, halved
1 lb. Baby Bella Mushrooms (Cremini)
½ cup Shallots, chopped

2 cups Chicken Broth
1 Tbsp Butter mixed with 1 Tbsp Flour
Fresh Parsley, chopped
Salt & Black Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
