Southwest Bean and Chicken Pasta

I found this recipe in a Taste of Home magazine, Chicken Recipe Cards
3 cups uncooked mostaccioli (sorry if I pronounced it wrong)
1/4 cup chopped onion
1/4 cup chopped sweet red pepper
2 tablespoon canola oil
1/2 teaspoon minced garlic
1 can (10-3/4 ounces) condensed nacho cheese soup, undiluted
1 package (9 ounces) ready-to-use Southwestern chicken strips
3/4 cup water
1 can (15 ounces) black beans, rinsed and drained
1/4 cup shredded Monterey Jack cheese, optional
Cook mostaccioli according to package directions. Meanwhile, in a large skillet, saute onion and red pepper in oil until tender. Add garlic; cook 1 minute longer. Stir in the soup, chicken and water. Bring to a boil. Reduce heat; cover and simmer for 8 minutes.
Stir in beans (I love black beans, but this seemed a bit too much); heat through. Drain mostaccioli; transfer to a serving bowl; top with chicken mixture. Sprinkle with cheese if desired.
Santa Fe Chicken and Rice
1 bag Success Jasmine Rice, White Rice, or Brown Rice
Non-Stick Cooking Spray
1 lb. seasoned chicken breast, cut into strips
1 (11 oz.) can Mexicorn, drained
1 cup mild salsa
1 (15 oz.) can black beans, drained and rinsed
1/2 cup jalapeno Monterey Jack cheese, shredded
1.) Prepare rice according to pkg. directions.
2.) While rice is cooking, heat skillet and spray with non-stick cooking spray. Add chicken and cook until chicken is no longer pink. Stir in corn, salsa, beans, and cooked rice. Sprinkle with cheese. Heat until cheese is melted.

This grilled chicken burrito bowl will remind you of Chipotle Mexican Grills burrito bowl. It's delicious and healthy for you.
If you love Mexican food, you will enjoy this great dish that you can now make at home.

Serves 4 to 6 people
Ingredients:
8 skinless, boneless chicken thighs
garlic powder
chile powder
smoked paprika, for seasoning chicken
salt
drizzle of olive oil
Cilantro lime rice
2 cans of black beans
1 tsp. garlic powder
1/2 tsp. chile powder
1/2 tsp. ground cumin
1 head of leafy green lettuce, cleaned and chopped
2 avocados, cut into cubes
1 cup of Greek yogurt
3/4 lb of monterey jack cheese, grated
Pico de gallo, recipe ingredients to follow
4 tomatoes, chopped
3 to 4 green onions, sliced
1 to 2 limes, juiced
1 to 2 jalapeno peppers, minced
1 bunch of cilantro, chopped, stems removed
Directions:
Make the cilantro lime rice first by following that video.
Make the pico de gallo first so the flavors can develop. Combine the tomato, green onion, jalapeno, lime juice and cilantro and salt in a bowl. Place in the refrigerator till needed.
Place the black beans in a sauce pan and add the garlic powder, chile powder and the ground cumin. Heat until hot.
Coat the chicken with a little olive oil and then season with the garlic powder, chile powder, smoke paprika and salt.
BBQ the chicken over medium high heat, 4 to 5 minutes on each side or until no longer pink.
Chop the chicken into bite size pieces.
Now bring everything together and make your burrito bowl.
First place the cilantro lime rice in the bottom of your bowl. Next add a layer of beans, then chicken, lettuce, avocado, yogurt, pico de gallo, and finish with cheese.
