How To make Chili Casserole with Cornbread
1 lb Lean ground beef
16 oz Jar salsa
15 1/2 oz Can dark red kidney beans
14 1/2 oz Can diced peeled tomatoes
1 1/2 c Niblet frozen corn
3 t Chili powder
1 t Cumin
8 1/2 oz Pkg cornbread mix
Milk Margarine Egg, if required by mix 1/3 c Shredded cheddar cheese
1 T Sliced green onions
1. Heat oven to 400 degrees. In large skillet over medium-high heat,
brown ground beef; drain. Stir in salsa, kidney beans, tomatoes, corn, chili powder and cumin. Cook 3 to 4 minutes or until thoroughly heated, stirring occasionally.
2. Meanwhile, prepare cornbread as directed on package using milk
and, if required, margarine and egg. Spoon cornbread batter around outside edge of ungreased 12x8-inch (2-quart) baking dish. Spoon hot beef mixture into center. (Casserole will be full.)
3. Bake at 400 degrees for 18 minutes. Sprinkle with cheese; bake an
additional 4 to 5 minutes or until cheese is melted and cornbread is deep golden brown. Sprinkle with green onions just before serving.

This is a most satisfying, warming, delicious one pot meal. It has all that you need in it. Add a side salad if you want to and enjoy. You probably have most of the ingredients on hand to make it. Cook up meat mixture ahead of time, store in the refrigerator or freezer and it will be ready when you are.

Ingredients
2lbs ground chuck
1/2 tsp cayenne pepper, or to your taste
1 tsp cumin
1 Tbsp black pepper
2 tsp salt
1 Tbsp chili powder
1 onion, diced
1 bell pepper, diced
1 lg or 2 med jalapenos, minced
1 1/2 Tbsp garlic, minced
1 15oz can fire roasted tomatoes
1 15oz can chili beans
2 1/2 cups cornbread mix
1 8oz package of cubed cheddar cheese
1 cup shredded cheddar cheese (we used colby jack)
Tater Tots
Preheat oven to 350 degrees
In large skillet, brown ground chuck. When almost done, add seasonings, onions, bell pepper, and jalapeno. Cook 4-5 minutes until vegetables are tender. Add beans and tomatoes, stir well and let simmer about 4-5 minutes. Nestle cubed cheese down into meat mixture. Pour cornbread mix on top of meat, using back of spoon to push some down into the meat. Top with tater tots. Bake 30 minutes. Add shredded cheese on top and bake another 10 minutes. Serve and enjoy!
