Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
Slow Cooker Sunday: Chicken Stew with Cornmeal Dumplings
Watch as I make a delicious slow cooker stew with cornmeal dumplings.
Here is the recipe in case you missed something:
Chicken Stew with Cornmeal Dumplings
4 medium carrots, sliced
2 stalks celery, sliced
1 cup frozen corn
1 small onion, coarsely chopped
4 cloves garlic, minced
1 1/2 teaspoons dried rosemary
1/2 teaspoon ground pepper
1 teaspoon salt
3 boneless, skinless chicken breasts
2 cups chicken broth
1 cup milk
2 Tablespoons all purpose flour
Cornmeal Dumplings
1/2 cup all purpose flour
1/2 cup corn meal
1 teaspoon baking powder
dash salt
2 egg whites
2 Tablespoons milk
2 Tablespoons canola oil
Spray slow cooker with olive oil or cooking spray. Add carrots, celery, onion garlic, corn, rosemary, salt and pepper. Pour chicken broth over vegetables. Lay chicken breasts on top and season with salt and pepper.
Cover and cook on low for 7 to 8 hours or on high for 3 1/2 to 4 hours.
Shred chicken with a fork. In a small bowl, combine the milk and 2 Tablespoons of flour. Stir into slow cooker.
Make the dumplings by stirring together flour, cornmeal, baking powder and salt. In another bowl, stir egg whites, milk and oil. Add egg mixture to flour mixture and stir until moistened.
Drop eight cornmeal dumplings by rounded tablespoon on top of hot chicken mixture. Cover and cook for 20 to 25 minutes. Do not lift slow cooker cover while the dumplings are cooking.

Game Day Chili Recipe
Ingredients (in order of appearance):
2 lbs lean angus beef
Salt and pepper to taste
1 onion, chopped
4-5 garlic cloves, chopped
1 (15 oz) can light red kidney beans, drained and rinsed
1 (15 oz) can dark red kidney beans, drained and rinsed
Chili Spice Mix:
2 tomatoes, chopped
1 tbsp tomato paste
1 tbsp dijon mustard
1 tbsp cayenne pepper
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
4 tsp chili powder
2 tsp cumin
2 tsp salt
2 tsp sugar
2 tsp dried parsley
1 tsp dried oregano
1 tbsp worcestire sauce
2 ½ cups beef broth
4 jalapenos, chopped
For Serving:
Sour cream
Cheddar cheese, shredded
Green onion, chopped
Directions:
- In a skillet on medium-high heat, add angus beef and cook breaking down occasionally until the beef has browned. Add salt and pepper to taste. Drain excess fat and set aside.
- Use the same skillet on medium-high heat, and saute onions and garlic until onions become slightly caramelized. Set aside.
- Use a 6 or 7 quart slow cooker, and first add the cooked beef followed by the onions and garlic.
- Add light and dark kidney beans, tomatoes, tomato paste, dijon mustard, chili spice mix, worcestire sauce, and beef broth. Mix to incorporate all ingredients well.
- Cover with lid and cook on low heat for 8 hours.
- After 4 hours, add in the chopped jalapenos (or to your spice level preference) and mix well. Cover and resume cooking for another 4 hours.
- Serve warm and add sour cream, shredded cheese, and chopped green onion or any desired toppings!
Cornbread Recipe
Ingredients (in order of appearance):
1 cup yellow cornmeal
1 cup all purpose flour
2 tsp baking powder
1 ½ tsp salt
1/3 cup granulated sugar
1 ¼ cup buttermilk
1 large egg
4 tbsp melted unsalted butter
1 stick unsalted butter (melted in cast iron skillet or baking dish)
Directions:
- In a mixing bowl, first add cornmeal, flour, baking powder, salt, and sugar. Mix to incorporate all dry ingredients well.
- Next, add buttermilk, egg, and melted butter. Mix to incorporate all wet and dry ingredients well.
- In a heated cast iron skillet, melt butter and pour in the cornbread batter. Spread evenly.
- Bake at 400 F for 20 minutes.
- Serve warm with desired toppings, such as honey and butter!
