It's Good Enough! (To eat) - Meatball and Dumpling Soup
Dumplings:
2/3 cup AP flour
1/3 cup cornmeal
2 tsp brown sugar
1 tsp baking powder
1 tbsp butter
1/2 cup milk
Combine and set aside while making your soup so the cornmeal has time to hydrate
1 Onion
3-4 Carrots
3-4 Ribs of Celery
2 Bell Peppers
several cloves of garlic
1/2 bulb of fennel
2-3 potatoes
1-2 quarts of stock
1/4 cup vinegar
2-3 splashes of worchestershire sauce
3 tbsp herbs de provence
salt and pepper
crushed red pepper to taste
1lb of meatballs
dice your onion, carrots, celery, peppers, fennel, and garlic. Saute in olive oil or butter until soft, 5-7min. Add your diced potatoes, herbs, and seasonings and cook another couple of minutes. Add stock or water, approximately 2 quarts, and sauce and vinegar. Let come to a boil, then reduce to a simmer. Break up your sausage and add, then allow to simmer covered for 30-60.
Uncover and dollop dumpling mixture on top, then cover and simmer an additional 20-30 minutes. Enjoy your one pot meal!

INGREDIENTS:
●1 pound ground beef
●3/4 cup finely chopped onion, divided
●1/4 cup dry bread crumbs or rolled oats
●1 egg
●5 teaspoons beef bouillon granules, divided
●3 teaspoons chili powder, divided
●3 tablespoons all-purpose flour
●1 tablespoon canola oil
●1 can (28 ounces) diced tomatoes, undrained
●1 garlic clove, minced
●1/2 teaspoon ground cumin
●1 can (16 ounces) kidney beans, rinsed and drained
●CORNMEAL DUMPLINGS:
●1-1/2 cups biscuit/baking mix
●1/2 cup yellow cornmeal
●2/3 cup milk
