How To make Chinese: Beef Shreds with Green Pepper
1 lb Flank steak
2 md Bell peppers
1 Clove garlic
4 tb Peanut oil
1/4 ts Salt
SAUCE: 1/4 c Stock
1 ts Thin soy sauce
1 ts Chili paste with soybean
1 ts Sherry wine
1 1/2 ts (approx) thin cornstarch
-paste Preparation: Remove membrane from flank steak. If it is a thick slab of meat, slice with grain into thin sheet about 1/4" thick. Slice across grain into matchsticks about 2 1/2" long. Halve and core bell pepper; scald pepper halves until color turns bright green; plunge in cold water to stop cooking process. Slice pepper thinly to match cooked meat. Peel and quarter garlic clove; add to peanut oil. Mix sauce ingredients. Stir-frying: Heat wok as hot as possible. Add garlic and 1/2 the oil; stir; remove garlic when it browns. Add salt to oil; stir. Add half of flank steak; toss and stir briskly to coat with oil and prevent scorching of meat. When meat begins to shrivel, remove to platter. Rinse wok; reheat; add rest of oil. Stir-fry remaining meat. Add peppers, sauce, other beef; toss briskly for about 1 minute until sauce evaporates. Serve. Garnishing note: Time and inclination permitting, deep-fry about 12 shrimp chips. Arrange on serving platter around beef and peppers.

INGREDIENTS
Marinating
12 oz (340 g) beef flank steak (or flat iron, chuck, tri tip)
1 tablespoon doubanjiang
1/2 teaspoon Shaoxing wine (or dry sherry)
1/2 teaspoon dark soy sauce (or soy sauce)
1/8 teaspoon white pepper
1 teaspoon cornstarch
1/4 teaspoon baking soda
2 teaspoons peanut oil (or vegetable oil)
Stir Fry
1 1/2 tablespoon peanut oil (or vegetable oil)
1 thumb ginger, minced
3 (total 8 oz / 225 g) cubanelle peppers (or anaheim peppers), cut into matchsticks
1 long red Asian chili pepper (or other type of hot pepper), sliced in rounds (Optional)
1 teaspoon light soy sauce (or soy sauce)
1/2 teaspoon sugar
1/4 teaspoon salt

Crispy salt and pepper beef, also known as ‘ crispy shredded beef ‘ is one of our family’s favourite Chinese beef dish. Crispy deep fried beef steak tossed with restaurant style classic mix of salt, pepper, Chinese five spices and fresh crisp vegetables.

INGREDIENTS
300 g Beef steak ( ribeye, sirloin or any tender steak )
1 Egg
1 Cup Corn/potato flour ( starch )
2 cloves Garlic
½ Sweet onion
½ Bell Pepper
Beef Marinade
1 tbsp Light soy sauce
1 tsp Ginger paste
1 tsp Sesame oil
1 tsp Sugar
¼ tsp Baking soda
Seasonings spice ingredients
½ tsp Salt ( or salt to taste )
½ tsp Black pepper powder

Shredded Pork with Green Peppers Chinese Recipe - 青椒肉丝
Ingredients:
200g pork loin
3 long green peppers
4 cloves of garlic
Marinade:
2 tsps (10ml) Chinese cooking wine
1 tbsp (15ml) soy sauce
1 egg white
2 tsps corn starch
2 tsps oil
Cooking sauce:
1 tsp salt
1 tsp sugar
1 tsp corn starch
2 tsps Chinese cooking wine
1 tbsp soy sauce
2 tsps sweet bean paste
2 oz (60ml) water

????HOW TO MAKE CRISPY SHREDDED BEEF IN CANTONESE SAUCE????
Crispy shredded beef in cantonese sauce.
Ingredients -
100/150 grams of beef per person
Rice (any kind and amount to your liking)
Batter mix -
1 - 1/2 tbs of corn flour
2 eggs
salt
Sauce -
1 ts garlic
1 ts ginger
1 small pepper
1/2 carrot
1/2 onion
Handful of spring onion
Oil for cooking the sauce and beef
Slash of soy sauce
Salt and pepper for seasoning
2 ts honey
2 tbs of white or red rice wine vinegar
2 tbs sweet chilli
(add more for your own liking)
Side notes - Don't undercook the beef when frying. Make sure you let it sizzle for a little longer then you think. Test this by checking the crunchiness of the batter. You want it to be crunchy. Also the batter mix. The more lumpy the more authentic it will be.
