How To make Chinese: Shrimp In Chinese Lobster Sauce
INGREDIENTS: 1 lb Jumbo shrimp (21-25 per
-pound) 1 tb Fermented black beans
2 Garlic cloves, minced
1 Quarter-sized slice fresh
-ginger, peeled, minced 1 tb Shao Hsing rice wine, or dry
-sherry 2 tb Peanut or corn oil
1/2 ts Salt
6 oz Ground pork butt
1 sm Onion, cut into 1-inch cubes
1 Bell pepper, cut into 1-inch
-cubes 1/2 ts Sugar
Big pinch white pepper 1/2 tb Light soy sauce
3/4 c Chicken stock
2 ts Cornstarch, blended with I
-tablespoon water 1 lg Egg, lightly beaten
1 Green onion, chopped
1 ts Asian sesame oil
Serves SHRIMP IN CHINESE LOBSTER SAUCE INStrUCTIONS: Shell and de-vein the shrimp. Butterfly shrimp by slicing them down the length of the back, stopping just above the tail. Rinse with cold water and blot dry. Cover the black beans with lukewarm water; let soak for 5 minutes. Drain. Combine with the minced garlic and ginger; gently crush into a paste. Mix in the wine; set aside. Place a wok over medium-high heat. When hot, drizzle in half of the oil. Add the shrimp and stir-fry until they begin to curl and turn bright orange, about 1 minute. Remove to a dish and keep warm. Reheat wok over medium heat; add remaining tablespoon of oil and the salt. Add the black bean paste and saute a few seconds until it becomes aromatic. Increase heat to medium-high. Add the pork and stir-fry until the morsels are no longer pink, about 3 minutes. Add onions, peppers, sugar, white pepper and soy sauce; toss together until the vegetables begin to soften, about 1 minute. Add the stock and keep tossing until it comes to a boil. Stir the cornstarch mixture to recombine, then drizzle into the center of the work, stirring constantly, until mixt--- TBBS v2.1/NM ! Shrimp with Lobster sauce| OLD TIME FAVOURITE
A great healthy option!
Shrimp with lobster sauce
The dish was never prepared with actual lobster. The name was invented in North America, to resemble a Cantonese dish that used a very similar sauce in preparing lobster. Due to the high cost of lobster, today we prepared the dish with shrimp, and call it Shrimp prepared with 'lobster' sauce.
Serves: 2 people
Prep time: 20 minutes
Ingredients:
3/4 lb. of Large shrimps
2 Egg white
A handful of snap peas
2 cups of Seafood broth or chicken broth
2.5 TBSP of cornstarch
2 cloves of garlic, minced
Scallions for garnish
4 TBSP of cooking oil
Marinade shrimp with:
1/2 tsp of salt
1/2 tsp garlic powder
For the sauce:
1 tsp of vegetable/ no msg chicken powder
1 TBSP Shao Xing wine
1/2 tsp of white pepper
1/2 tsp of salt
1/2 tsp of sugar
1 tsp of sesame oil
This is a very simple and healthy dish to make especially if you used peeled and deveined shrimps.
This was a popular dish in all Chinese restaurants in the '80s.

Where is the lobster? you may ask. But no lobster is being used in this dish. Have you checked the lobster price lately? This dish was conceived many years ago in the U.S. to mimic Southern China and Hong Kong way of cooking their lobster. The same seasoning mixture was used but is quite affordable when lobster is not being used! We used to serve a ton of this dish back when we still operated the Dragon House. Now the secret family recipe is finally revealed!!!
Shrimp in Lobster Sauce Recipe
Ingredients:
1/2 # (227g) Jumbo shrimp (21-25 count peeled and deveined)
1/4 # (113g) Ground pork
2 Slices fresh ginger (crushed or minced)
3 Cloves garlic (crushed or minced)
1-1/2 to 2 Cups (355 to 473ml) Soup /chicken stock
1 Tablespoon (14ml) Oyster sauce
1 Teaspoon (0.5ml) Sugar
1/2 to 1 Teaspoon (0.25 to 0.5ml) Salt
1 Tablespoon (14ml) Black bean paste (recipe:
1/4 to 1/2 Teaspoon (1.25 to 2.5ml) Dark soy sauce
Dash White pepper powder
1/8 Teaspoon (0.62ml) Sesame oil
1 Egg
Corn starch
Optional: Green onions, green peas, water chestnuts or whatever you'd like
Directions:
1. Marinate shrimp with 1 (0.5ml) teaspoon light soy sauce, 1 (0.5ml) teaspoon rice wine, dash white pepper powder, 1/2 tablespoon (7ml) corn starch and 1/2 teaspoon (7ml) vegetable oil for 2 hours in frig or overnight.
2. Heat wok and add 1/2 tablespoon (7ml) oil.
3. Put in shrimp and cook till half done (for 30 to 45 seconds) and take out.
4. Put more oil in and ginger and garlic. Cook for a minute.
5. Add in pork and cook for another 3-4 minutes.
6. Add in soup stock.
7.Add in salt, sugar, white pepper powder, oyster sauce, dark soy, sesame oil and black bean paste.
8. Add in shrimp and green peas. Bring to a boil.
9. Thicken sauce with corn starch and water mixture.
10. Scramble egg and drizzle on top.
11. Top with green onion (optional).
12. Serve with rice.
