How To make Chocolate Cafe Au Lait Cake
1 (4 ozs.) margarine
1 1/2 c Graham cracker crumbs
6 oz Semisweet chocolate chips
1/2 c Chopped walnuts
1 pk (18.25-oz) devil's food or
Chocolate fudge cake mix 1 1/2 c Heavy cream
1 1/2 ts Instant coffee powder
1/3 c Sifted powdered sugar
Melt margarine in a medium saucepan over low heat, or in a 1-quart glass bowl in a microwave oven on High 1 to 1-1/4
minutes. Stir in graham cracker crumbs and let cool. When cool, stir in chocolate chips and walnuts; set aside. Preheat oven to 350 degrees. Grease and flour two 9-inch round cake pans. Prepare cake mix according to package directions. Turn batter into prepared pans. Sprinkle crumb-walnut-chocolate chip mixture over cake batter, dividing evenly between pans. Using fingertips or back of a spoon, lightly press mixture into batter (crumb mixture should not sink all the way into batter.) Bake cake as package directs (30 to 35 minutes), or until cake tester inserted in center comes out clean. Remove cakes from oven; let cool completely in pans before unmolding. Keep layers crumb side up. In a medium bowl, beat cream, coffee powder, and powdered sugar with an electric mixer on high speed until stiff. Place one cooled cake layer, crumb side up, on a serving plate. Spread three quarters of whipped cream mixture over cake. Top with remaining cake layer, crumb side up. Frost sides of cake with remaining whipped cream; do not frost top of cake. Refrigerate until serving time. Source 365 Great Chocolate Desserts -----

Ingredients:
- Freshly Ground (Coarse) Coffee Beans
- Steaming hot, pre-boiled water
- French Press
- Steaming hot Milk
Preparation:
1. Boil 4 cups of water. Once it boils, remove it from heat and let it cool down to about 190ºF or so.
2. Preheat the French Press pitcher and plunger with ½ cup of steaming hot water until everything warms up. Drain.
3. Add 4 tbsp of coffee grounds into the pitcher (1 tbsp of coffee per cup of water).
4. Fill the press half way with the remaining 4 cups of hot water. Let sit for 1 minute to bloom, then stir. Add the remaining water almost to the top of the pitcher. Let sit 3 minutes.
5. Serve with an equal amount of steaming hot milk
(about ½ cup). A Café Au Lait is half coffee and half milk.

4 egg yolks, 40g sugar (A), 1 pinch of salt
30g cooking oil (except olive), 40g milk, vanilla extract
All-purpose flour 60g (can be replaced with cake flour), cocoa powder 12g, baking powder 2g
Meringue: 3 egg whites, sugar (B) 50g
Strawberry Chocolate Cream: Dark Chocolate 50g, Whipped Cream 50g (Sugar Free), Butter 15g, Strawberry Jam 35g
Strawberry (can be replaced with your favorite fruit)
Bake the cake in a preheated oven and allow it to cool completely.
Egg, milk room temperature 30 minutes

Flourless Moist Chocolate Cake / Gluten Free / No Flour
Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml
120g dark chocolate (1 cup)
30g unsalted butter (2 tbsp)
30ml milk (2 tbsp)
4 egg whites
a pinch of salt
50g sugar (4 tbsp)
4 egg yolks
1 tsp vanilla extract (5ml)
Bake at 170C for about 20 minutes
Chocolate Cream Filling
150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
90g heavy cream (1/3 cup)
300g cold heavy cream (1 1/4 cup)
30g sugar (2.5 tbsp)
Cocoa Syrup
75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
2 tbsp sugar (25g)
Mix to dissolve and let it cool down completely
Chocolate Glaze
50g cocoa powder (1/2 cup)
115g sugar (1/2 cup + 1 tbsp)
85ml water (1/3 cup)
85g heavy cream (1/3 cup)
1 tbsp gelatine powder (9g)
3 tbsp cold water to bloom gelatine (45ml)
