You should have seen my face when I was daydreaming about Easter candy and I put this combo of malted chocolate cupcakes and marshmallow frosting together in my head. Well, it has become a reality and since Spring is here and Easter is around the corner, it is the best time to make some cute bunny cupcakes. I have tried them out and trust me, these will make your Easter brunch a bit hit. Triple Malt Chocolate Cake
A moist and delicious triple chocolate malt cake with 3 layers of malt: malt chocolate cake, malt frosting, and a crushed malt crust. It's a malt lover's dream come true!

In addition to the ingredients below, you will also need a little unsalted butter and flour for buttering and dusting the cake pans.
✅Ingredients
MALT CAKE:
• 3 cups all-purpose flour
• 3 cups granulated sugar
• 1½ cups unsweetened cocoa powder
• 1 cup malted milk powder
• 1 tablespoon baking soda
• 1½ teaspoons baking powder
• 1½ teaspoons salt
• 4 eggs
• 1½ cups buttermilk
• 1½ cups warm water
• ½ cup vegetable oil
• 2 teaspoons vanilla extract
MALT FROSTING:
• 1 cup butter, softened
• 8 oz cream cheese, softened
• 1½ cups malted milk powder
• 1 tablespoon vanilla
• 6 cups powdered sugar (approximate)
• 4 cups malt balls, crushed
CHOCOLATE GANACHE:
• ½ cup heavy cream
• 4 oz semi-sweet chocolate chips

1️⃣ 00:25 - To make the cake, preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour (or cocoa powder) and tap out the excess.
2️⃣ 00:32 - Mix together flour, sugar, cocoa, baking soda, baking powder, malt powder, and salt in a stand mixer using a low speed until combined. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
3️⃣ 02:21 - Divide batter among the three pans. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean). Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely.
4️⃣ 03:04 - While the cakes are cooling, make your frosting. In a medium-sized mixing bowl, cream together the butter and cream cheese with a hand mixer (or you can use a stand mixer). Add in the malted milk powder and vanilla and mix until combined. Add in the powdered sugar 1 cup at a time until desired consistency achieved. It should take approximately 6 cups. It should be spreadable, but not runny. It needs to be able to hold to the cake.
5️⃣ 04:08 - Assemble the cake by frosting in between the 3 layers and the sides of the cake. Place 1 cup crushed malt balls on the outside edges of the cake. Just take a handful and gently smoosh it into the frosting.
6️⃣ 04:51 - Make chocolate ganache: In a small saucepan, bring the heavy cream to a boil, stirring constantly.
7️⃣ Once it boils, remove from heat and add in the chocolate chips, stirring until smooth. Pour over the cake, letting it drip down the sides. Cool to harden.

Ingredients:
-Maida (All-purpose flour) ¾ Cup (100g)
-Cocoa powder ¼ Cup (20g)
-Baking powder ¼ tsp
-Malt powder 3 tbs (40g)
-Anday ki zardi (Egg yolks) 5 (room temperature)
-Bareek cheeni (Caster sugar) 1 tbs
-Anday ki safedi (Egg whites) 5 (room temperature)
-Bareek cheeni (Caster sugar) 1 Cup
-Namak (Salt) 1 pinch
-Cooking oil ¼ Cup
-Olper’s milk ¼ Cup
Prepare Sugar Syrup:
-Hot water ½ Cup
-Sugar ¼ Cup
-Vanilla essence ½ tsp
Prepare Malt Frosting:
-Cream cheese 200g
-Cocoa powder ¾ Cup
-Malt powder ¾ Cup
-Makhan (Butter) 115g (room temperature)
-Milk chocolate melted 150g
-Ice cubes
-Olper’s Dairy Cream 300g
-Icing sugar 2 Cups
Directions:
-Grease 9-inch baking pan with cooking oil,lined with butter paper & set aside.
-In a bowl,place a sifter,add all-purpose flour,cocoa powder,baking powder,malt powder & sift all dry ingredients together then mix well & set aside.
-In a bowl,add egg yolks,caster sugar,whisk well for 1-2 minutes & set aside.
-In a bowl,add egg whites,caster sugar,salt & beat well until foamy and stiff peaks form (10-12 minutes).
-Now add whisked yolk mixture & beat well.
-Gradually add dry ingredients & fold with the help of spatula.
-In a small bowl,add cooking oil,milk,gradually add 1 cup of batter & mix until well combined.
-Now add all the mixture in remaining batter & mix well.
-Pour batter in prepared baking pan & bake in preheated oven at 180C for 22-25 minutes.
-Take out from the oven & let it cool completely.
Prepare Sugar Syrup:
-In a small jug,add hot water,sugar & vanilla essence,mix well until sugar is dissolve & set aside.
Prepare Malt Frosting:
-In a bowl,add cream cheese,cocoa powder,malt powder & beat well.
-Add butter & beat until well combined.
-Add melted chocolate,beat well & set aside.
-In a large bowl,add ice cubes & place another bowl over it,add cream & beat well.
-Add icing sugar & beat until stiff peaks form.
-Add prepared chocolate mixture & beat until well combined,transfer to a piping bag & set aside.
-Remove cake from baking pan & place on a cake stand.
-With the help serrated knife,horizontally cut two layers of cake.
-On base layer of cake,brush prepared sugar syrup,add prepared malt frosting & spread evenly.
-Place 2nd layer of cake & brush prepared sugar syrup on it.
-Add & spread malt frosting & frost the outside of the cake with malt frosting.
-Decorate cake with white chocolate,malt chocolate balls and raspberries.
-Refrigerate until serve.
-Cut into slices & serve!

Crust ~ 15 whole oreos & 3 tbsp butter
Cheesecake ~ 2 bricks cream cheese, 1/4 cup brown sugar,1/4 cup white sugar, 2 eggs, 1/4 cup sour cream, 1 cup chocolate, 1 tsp vanilla, 1 tbsp flour, 1 tbsp cocoa, 1/2 cup chocolate malt milk powder
Topping ~ 1 cup chocolate, 1/2 cup heavy whipping cream
To cook ~ Add 1 cup water to instant pot, place cheesecake on trivet, pressure cook on high for 28 minutes, rest 10 minutes, break seal, put in refrigerator for a minimum of 4 hours ( preferably overnight ), Then enjoy :)
