Chocolate Walnut Cake
For the cake
200 gms unsalted butter
125 grams caster sugar
125 grams brown sugar
2 eggs
110 grams dark chocolate, melted
1 tbsp cocoa powder
1 tsp baking soda
1/2 tsp salt
1 tsp Vanilla Essence
1 cup hot coffee (1 cup hot water + 2 tsp coffee powder)
1 and 1/3 cup all-purpose flour
For the vanilla sugar crumble
50 gms roasted chopped walnuts
2 tbsp caster sugar
1/4 tsp vanilla essence.
Method
Preheat the oven to 180° C and line a loaf tine with with parchment paper.
In a big bowl, cream together the butter and caster sugar until just combined.
Add the eggs and continue to blend until just about incorporated.
Slowly blend in the cooled melted chocolate.
Add in the baking soda, salt, and cocoa.
Alternate between the hot coffee and flour in 3 batches until all comes together well.
Pour the batter into the loaf pan.
Mix all the 3 ingredients for the walnut crumble together in a separate bowl and spread over top of the cake.
bake for 40 to 45 minutes or until a toothpick inserted comes out with damp crumbs.
• Refrigerate over night and cut slices only the next day. This cake is very delicate in nature and will not hold its shape if cut when still warm.

Makes one 9-x-5-inch (2L) loaf
Ingredients
1 ½ -¾ cups (375-400 g) mashed ripe bananas (3-4 bananas)
6 Tbsp (90 g) unsalted butter, melted
½ cup (100 g) granulated sugar, plus extra for sprinkling
½ cup (100 g) packed light brown sugar
1 large egg, at room temperature
1 tsp (5 mL) vanilla extract
1 ½ cups (225 g) all-purpose flour
1 tsp (5 g) baking soda
¼ tsp (.75 g) salt
1 cup (250 mL) chocolate chips or toasted walnut pieces (optional)
Directions
1. Preheat the oven to 325 F (160 C) and grease a 9-x-5-inch (2L) loaf pan.
2. Whisk the banana, melted butter, granulated and brown sugar together until well-blended. Whisk in the egg and vanilla.
3. In a separate bowl, sift the flour, baking soda and salt. Add this to the banana mixture and stir just until blended. Stir in the chocolate chips or walnut pieces (if using). Scrape the batter into the prepared loaf tin and sprinkle the top with a little sugar. Bake for about 75 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake for 20 minutes in the tin, then turn it out to cool completely on a cooling rack.
The banana bread will keep, well-wrapped for up to 3 days.
