How To make Christmas Cake West Indian Style
***Fruit Mixture*** 1 cup raisins
1 cup currants
1/2 cup candied cherries
1/2 cup candied citrus peel
1 cup mixed dried fruit
1 cup rum
1 cup sweet sherry
or port wine ***Cake*** 1/2 pound butter
at room temperature
1/2 cup brown sugar
4 eggs
2 cups flour
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground nutmeg
3 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
2 1/2 teaspoons lemon essence
2 1/2 teaspoons almond essence
1 teaspoon vanilla essence
1/4 cup brown food coloring :
up to 1/2 cup
1/2 cup rum
Additional rum for basting during storage
Fruit Mixture: Mix together all the ingredients and store in a tightly sealed jar for at least 1 month
The Cake: Prepare a 10" deep round cake baking tin or a 13" x 9" baking tin by lining it with two layers of waxed paper, greasing between the layers. Preheat the oven to 250 degrees. In a large bowl, cream together the butter and sugar until they are light and fluffy. Add the eggs, one at a time, mixing well after each addition. Sift the flour, baking powder and all the dry spices together. Add the lemon essence, almond essence and vanilla essence to the fruit mixture. By hand, stir tablespoonsful of the flour mixture and the fruit mixture alternately into the butter, sugar and egg mixture. Add the browning gradually, stirring until a deepish brown colour is reached. Turn the cake mixture into the baking tin, smooth the top and bake in the oven for 3-4 hours or until a skewer or wooden toothpick, inserted, comes out clean. This can take an additional hour or two. Remove the cake from the oven, prick it all over with a skewer or toothpick and pour the rum all over it. Remove the cake from the tin when it is cool, wrap it tightly in waxed paper, place it in an airtight container and leave for a month for best flavour. Every week, prick the cake with a skewer and pour on about 1 tablespoon of rum. (Makes one 5 pound cake. )
Serve with Hard Rum Sauce.

Black cake recipe
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp glove
1 stick/ 1/2 cup butter
1 cup brown sugar
3 large eggs use 4 if they're small
2 1/2 to 3 cups pureed fruits adjust fruits to your liking
1 tbsp lemon zest
1 tbsp vanilla
2 tsp almond extract
burn sugar or browning add as much or as little as you like.
if your batter is too dry add alittle wine.
pre-heat oven to 285°F bake for 1 1/2 to 2 hours every oven cooks different so keep checking for doneness.

Black cake, fruit cake or rum cake as it's called in the Caribbean is a favorite to have around Christmas time throughout the Caribbean. Sorrel Fruit Cake, Perfect Christmas Cake
This Sorrel Fruit cake is the next best thing to have for this holiday season. It's extremely moist, not to mention tasty !!
**Ingredients For Sorrell Cake**
2 cups sorrel puree
1-2 cups blended fruits
1/2 pound butter or 228 grams
1/2 pound sugar or 1 cup
2 cups baking or all purpose flour
4 eggs
2 tsp lime or lemon zest
1 tsp salt
2 tsp baking powder
1-2 tsp cinnamon powder
1-2 tsp nutmeg
1-2 tsp mix spice
1 tbsp vanilla essence
1 tsp almond & rose water
**Instructions**
Brew sorrel petal along with ginger and cinnamon stick in about 2 cups water.
Allow to cool in order to extract its color and softens the petals
Blend sorrel petals with a bit of its liquid until smooth (making a puree)
Pour 2 cups of sorrel puree along with 1 cup of blended fruits and put aside. (Link is provided on how to prepare fruits)
Cream butter and sugar until fluffy
Beat eggs with lime zest and add to butter mixture, gradually.
Pour puree into butter mixture along with vanilla essence, almond and rose water
**Dry Ingredients**
Sift flour, cinnamon powder, nutmeg, mix spice, salt and baking powder and gentle fold into butter batter
**Add red food coloring if the mixture is not to your desire redness**
Note: Some sorrel are richer in color than others.
Pour into grease baking pan
Bake for 1 hour and 30 minutes
350 degree
**This 1/2 1b cake recipe will give two 7 Inch
Cakes or 1 large 9 Inch Cake**
Cakes are ready when a toothpick comes out clean, soak with mixture of your favorite rum, wine and remaining sorrel syrup.
Brush with any leftover sorrel puree for a beautiful sheen.
