How To make Cinnamon Butterfly Rolls
1/2 c Sugar
1 ts Salt
1 pk Active dry yeast
4 1/3 c Flour, all-purpose
1 c Milk
1 Butter or margarine
2 ts Vanilla extract
2 Eggs
1/2 c Brown sugar, packed
1/2 c Pecans, chopped
1/2 c Raisins, dark seedless
1 ts Cinnamon, ground
Servings: 18 In large bowl, combine sugar, salt, yeast and 1 cup flour. In 1 quart saucepan over low heat, heat milk and 1/2 cup butter or margarine (1 stick) until very warm (120-130'F). Butter or margarine does not need to melt. With mixer at low speed, gradually beat liquid into dry ingredients just until blended. Increase speed to medium; beat 2 minutes. Beat in vanilla extract, 1 egg, and 1 cup flour to make a thick batter; continue beating 2 minutes scraping bowl often. With wooden spoon, stir in 2 cups flour to make a soft dough. Turn dough onto floured surface and knead until smooth and elastic, about 10 minutes, working in more flour (about 1/3 cup). Shape into ball; place
in greased large bowl, turning to grease top. Cover; let rise in warm place (80-85'F) until doubled, about 1 1/2 hours. Punch down dough. Turn dough onto lightly floured surface; cut dough in half; cover and let rest 15 minutes. Grease 2 large cookie sheets. In small bowl, mix brown sugar, pecans, raisins, and cinnamon. In small saucepan over low heat, melt 4 T butter or margarine (1/2 stick). With floured rolling pin, roll half of dough into 17 1/2x12" rectangle. Brush with half of melted butter; sprinkle with half of brown-sugar mixture. From 17 1/2" edge, roll dough jelly-roll fashion; pinch seam to seal. Cut roll into 9 wedges, 2 1/2 inches at wide side, 1 inch at short side. Turn wedges short side up. Press handle of wooden spoon across each. Repeat with other half of dough. Place rolls 2 inches apart on cookie sheets. Cover; let rise in warm place until doubled, about 1 hour. Preheat oven to 350'F. In cup, beat remaining egg; with pastry brush, brush rolls. Bake rolls 20 minutes or until golden. Remove rolls from cookie sheets; cool on wire racks.

The method of making this soft dinner rolls is so simple.We can make them in 4 simple steps.

Bake at 375 F preheated oven for 18-20 minutes or until the tops are golden brown in color.
Place the tray in the lowest rack of the oven to prevent any over browning.

How to substitute egg in this quick dinner rolls recipe :
Role of egg in bread making:
Eggs added to dough help with rising. A bread dough rich with egg will rise very high, because eggs are a leavening agent (think genoise or angel food cake). As well, the fats from the yolk help to tenderize the crumb and lighten the texture a bit. Eggs also contain the emulsifier lecithin. Lecithin can add to the overall consistency of the loaf.
So it is difficult to substitute something else for egg to get the same result.
At the same time, i can say that ,as we have used only one egg in this quick dinner roll recipe,we can easily replace the egg to make dinner rolls without much difference in texture and taste of the rolls.
As one egg is approximately 45 ml,just replace the same volume with milk or water.So you can add 3 tablespoon of water or milk in place of one egg.
Remember, this will not be equivalent to adding an egg,but i can promise you that it will be difficult to find any difference between the one made with and without egg in this particular quick dinner roll recipe.

Ingredients
Cinnamon roll dough:
Milk 5/6 cups (200ml) Warm
Sugar 1 tsp.
Yeast 2 full tsp.
4 tbsp. flour
We take the flour from the total amount of flour for the dough. For the dough we need 4 cups of flour (560g)
2 eggs
Sugar 4 tbsp (80g)
Salt 1/2 tsp.
Room temperature butter 1/3 cup (75g)
Flour 4 cups (560g), of which we have already taken 4 tbsp.
Apple pie filling:
Peel 3 pounds (1.350 kg) apples, remove core
Slice the apples not very finely
Butter 1/4 cup (55g)
Place over medium heat
After 3 to 5 minutes, add the cinnamon sugar
Sugar 1 1/2 cups ( 300g) and Cinnamon 1 tbsp.
Mix together 1/3 cup (60g) cornstarch and 1 cup water
Salt 1 tsp.
Cinnamon filling:
Mix 1/2 cup (100g) sugar and 1-2 tablespoon of cinnamon together
Soft butter 1/3 cup (75g)
Cream cheese icing for cinnamon buns:
Mix 1/4 cup soft butter (55g) and 3oz cream cheese (85g) together
Vanilla extract 1 tsp
3/4 cup powdered sugar (150g)
If you get a thick cream add 1-2 tablespoons of milk
