How To make Quick Cinnamon Rolls
1 c Water
1 c Milk
1/2 c Butter
6 1/2 c All-purpose flour
1/2 c Sugar
3/4 ts Salt
2 Envelopes Instant Yeast
1 Large Egg
4 tb Butter
4 tb Brown sugar
2 tb Honey
1/4 c Butter, softened
Combine water, milk and butter in a bowl and microwave on full power for 90 seconds to 2 minutes (120 to 125 degrees F on candy thermometer). Combine 2 cups flour, sugar, salt and yeast in food procesor or mixer and process or mix for 10 seconds to mix well. With processor or mixer running, pour the warm liquid into the flour, add the egg and process for 20 seconds. Stop processor and add 2 1/2 cups of flour, process 40 seconds. If using mixer, switch to dough hook and mix for 2 minutes. Turn sticky dough onto floured board. Gradually add enough of the rest of the flour and knead only until the dough is not sticky but is still soft. Cover with a mixing bowl and let rest 15 minutes. It should be bubbling happily by then. Generously grease 2 8 inch square or round pans. Melt 2 Tablespoons of butter in each pan and add 2
Tablespoons of brown sugar and 1 Tablespoon of honey. Sprinkle cinnamon over butter mixture. Divide the dough in half. Roll 1 half into a 10 x 20 inch rectangle on a floured board. Brush with the softened butter and spread with cinnamon and brown sugar. Roll up like a jelly roll stretch slightly by pulling on the ends to even thickness. Press lightly along edge to seal. Using a floured knife, cut into rolls. Place in prepared pan with cut sides down. Repeat with other half. Cover with clean tea-towel and place in an unheated oven with a pan of hot water on the bottom rack. Let rise for 40 minutes. Before baking, remove pan of water and rolls. Heat oven to 375 F. Bake rolls for 20 to 25 minutes or until just golden brown. Turn out onto tray or piece of waxed paper. Tips: Use a candy thermometer to check temperature of water. May be proofed in the microwave on low for 10 minutes instead of in regular oven. Let dough rest for 15 minutes before baking. A 1000 watt microwave was used, times may need to be adjusted. Sometimes, 40 minutes rising is too long, if the dough starts to look like it is going to overflow then cook it right away. Nuts, raisins or cherries may be added either to the pan or spread over the dough before rolling. -----

The softest cinnamon rolls I ever made! Before they used to turn out so dry and crummy, but now I don't use any other recipe than this one!

2½ cups all purpose flour
¼ cup sugar
2¼ teaspoons instant yeast
½ teaspoon salt
½ cup whole milk
3 tablespoons butter
2 tablespoons vegetable oil
1 teaspoon vanilla
1 egg
¼ cup water
FILLING
¼ cup butter soft
⅓ cup brown sugar
1 tablespoon cinnamon
pinch salt
CREAM CHEESE GLAZE
4 ounces cream cheese room temperature
2 tablespoons butter room temperature
¾ - 1 cup confectioner's sugar
½ teaspoon vanilla
INSTRUCTIONS
For the dough, combine in a large bowl the flour, sugar, instant yeast and salt. Heat milk in a small pot over the stove or in the microwave until quite warm. Add butter and stir until melted. Add vegetable oil and vanilla.
Cool milk mixture to lukewarm if necessary. You should barely be able to feel it when you stick your finger in it. Make a well in the dry ingredients and add milk mixture. Add egg and water. Mix by hand or using stand mixer until the mixture forms a very soft, sticky dough. Knead 6-8 minutes using the dough hook attachment or by hand. Add 2-3 tablespoons of flour if the dough looks too much like a thick batter, but it should still be very sticky. If the dough is very dry and easy to handle, add more water to make it sticky. Knead until it feels very smooth. Cover well with plastic wrap and proof for 1½ - 2 hours or until doubled in bulk.
While dough is rising, combine the brown sugar and cinnamon in a small bowl for the filling. Once the dough has proofed, roll out into a rectangle that measures 15x10 inches. Use a small amount of flour on your work surface to prevent sticking. Spread the soft butter over entire surface of the dough, then sprinkle on the brown sugar and cinnamon mixture. Starting from long edge closest to you, roll dough as tightly as you can. When you reach the end, pinch the seam very well to seal.
Using a sharp knife or a piece of string, cut the roll into 8-12 buns. Arrange evenly in a buttered parchment lined 14 x 8 inch pan and cover with plastic. Allow to rise in a warm place for another 45-60 minutes or until doubled in size.
Preheat oven to 375F/190C. Bake rolls for 18-22 minutes or until golden brown and fully cooked in the middles. Set aside to cool while making the frosting.
For frosting, cream together cream cheese and butter until smooth. You can do this by hand or with an electric mixer. Slowly add the powdered sugar, a couple of tablespoons at a time, creaming well after each addition. Add vanilla and beat until smooth.
Frost cinnamon rolls while they are still slightly warm but not too hot. The frosting should not melt. Serve immediately or keep well wrapped in the refrigerator for up to 5 days.

No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.

TikTok Viral Upgraded Canned Cinnamon Buns
2 cans cinnamon rolls in a 9x13 pan (5 pieces per can)
1 cup heavy cream
1 stick melted butter
1 tbsp cinnamon
3/4 cup light brown sugar
Directions:
Place cinnamon rolls into 9x13 pan
Evenly add 1 cup heavy cream
Combine melted butter, cinnamon, and light brown sugar until fully incorporated and pour over cinnamon rolls
Cover with foil and Bake 350 for 45-ish minutes until liquid is mostly absorbed
Cover with icing from the cinnamon roll cans and enjoy!

MINI CINNAMON ROLLS:
- 280g ( 2 cups ) Self Raising Flour ( OR all purpose flour + 3/4 tsp baking soda)
- 200 g ( 7 ounces ) Sweet Yogurt ( or any type of plain yogurt + 2 tbsp sugar)
- 80 g ( 3/4 stick ) Softened Butter
PLEASE NOTE: They are not supposed to rise like traditional yeast-raised cinnamon rolls - see the video for more details. Bake the mini rolls for only 4-5 minutes!
Filling:
- 30-40 gr Butter ( 2-3 tbsp )
- 100 gr Brown Sugar ( 1/2 cup)
- 1 tbsp Cinnamon
- 1/2 tbsp Corn Starch
- 1/4 tsp Salt
Cream Cheese Glaze:
- 100 gr Philadelphia Cream Cheese ( 1/2 cup Cream Cheese)
- 40 gr Powdered Sugar ( 1/3 cup)
- 1 tsp Vanilla
- Splash of Milk ( Start with 2 tbsp and adjust to your liking. For a thinner glaze add more milk)
