How To make Clam Stuffed Mushroom Caps
1/2 c Butter
2 lb Mushrooms, 1-1/2" to 2" in
-diameter 1 c Minced clams, with liquid
1 Clove garlic, minced
1/2 c Dried bread crumbs
1/3 c Parsley, chopped
3/4 ts Salt
1/4 ts Ground black pepper
Lemon juice Melt butter in sauce pan. Remove and dice mushrooms stems. Dip caps in butter and place, rounded side down, on a rack on a cookie sheet. Drain clams and reserve liquid. In melted butter, saute mushrooms stems and garlic. Add clam liquid and simmer until mushroom stems are tender. Remove from heat and stir in remaining ingredients. Spoon mixture into mushroom caps. Broil about 6 " from heat for about 8 minutes, until mushrooms are tender and tops are lightly browned. Sprinkle a few drops of lemon juice on each and serve hot. Ingredients:
Mushrooms- 10 Pcs
Olive Oil- 1 Tbsp
Garlic- 1 Tbsp(Minced)
Cream Cheese- 8oz
Parmesan Cheese- ¼ Cup
Black Pepper Powder- ¼ Tsp
Onion Powder- ¼ Tsp
Cayenne Pepper- ¼ Tsp
Salt- ¼ Tsp or to taste
Bread Crumbs- ¼ Cup
Instruction:
· Clean the Mushrooms and dry it up.
· Remove stems from mushrooms and roughly chop stems.
· In a medium skillet over medium heat, add oil. Add chopped mushrooms stems and cook until most of the moisture is out 5 minutes. Add garlic and cook until fragrant, 1 minute. Add salt as per your taste.
· Let it cool down slightly, then add cream cheese and mix it thoroughly. Add onion powder, pepper, cayenne pepper, and parmesan cheese. Give it a quick mix.
· If you want you can add herbs.
· Fill mushroom caps with filling and sprinkle with bread crumbs and more Parmesan on top.
· Air fry or bake it until mushrooms are soft and the tops are golden,6 to 10 minutes @ 400°F(depends on the size of the mushroom).
· You can garnish with parsley to serve.
Tips:
1. Make sure that the cream cheese is at room temperature.
2. You can freeze this mushroom without cooking for 3 months. However, it is Okay to cook stems and mix with filling before freezing.
3. If you have the extra mix just roll it into small balls freeze it for later use.
4. Small size mushrooms will be done in 6 mins, medium size takes 8 mins, and large mushrooms take 10 mins.
