How To make Cloud Nine Cheesecake
1 1/2 cups fine graham cracker crumbs -- 18-20 crackers
1/2 teaspoon cinnamon
1/3 cup brown sugar
packed
1/3 cup butter :
melted
filling:
8 ounces cream cheese
1 1/2 cups dry curd cottage cheese
1/2 teaspoon salt
1 package fluffy white,cherry fluff or lemon fluff
frosting mix 1 tablespoon vanilla
Blend crumbs, cinnamon and brown sugar. Add butter and mix well. Press crumb mi xture evenly over bottom and sides of 8" square pan.
FILLING: Heat oven to 350. Soften cream cheese. Press cottage cheese and salt through si eve into large mixer bowl containing cream cheese; set aside. Beat frosting mix as directed on package. Mix cheese; gradually beat in prepared frosting and fl avoring. Pour into prepared pan. Bake 35 min. Cool; then refrigerate. Top each serving with fresh or frozen strawberries, thawed. 9-12 servings.

Ingredients :
Jelly powder 2 pkt
Cornstarch 1 Cup
Water 1/3 Cup
???? I used aloe vera jelly powder for white clouds, blueberry jelly powder for blue and raspberry jelly powder for pink.
????I used a stand mixer on high speed and it takes exactly 7 minutes. If you are using a hand mixer MAYBE it takes a few minutes more. Just check the consistency with the video.
????You will have ~4 marshmallows per every 1 pkt of jelly powder

Zutaten für eine Springform mit 24-26 cm Durchmesser:
• 1 kg Quark, von Magerstufe bis 40% Fettgehalt ist alles möglich
• 5 Eier
• 200 g Zucker
• 2 Päckchen Puddingpulver, Vanille oder Mandel
• von einer halben unbehandelten Zitrone den Schalenabrieb und den Saft
optional
• 200-250 g Schlagsahne
• 1 Päckchen Vanillezucker
• 1 Päckchen Sahnefest
• rote Grütze, nach Möglichkeit selbst gemachte
Den Cheesecake bei 175 Grad, Umluft 150 Grad für ca. 1 Stunde backen. In den letzten 10 Minuten eventuell mit Alufolie abdecken.

1 egg
400g plain yogurt
1/2 c heavy cream
70g cream cheese
4tbsp sugar
instructions:
1. strain 400g plain yogurt overnight
2. let cream cheese come to room temperature, and mix in egg yolk until smooth
3. mix yogurt into cream cheese mixture
4. whip heavy cream until stiff
5. fold whipped cream into cream cheese mixture
6. whip egg white until stiff
7. add sugar into egg white mixture
8. fold merengue into cream cheese mixture
9. put in a strainer and put in fridge for 1-2 hours
