Matcha Cloud Soufflé Cheesecake | Ultra-Rich Matcha Flavor Detailed Recipe

Egg Whites ··· 75g
Sugar ··· 38g
Egg Yolks ··· 35g
Cream Cheese ··· 90g
Hot Milk ··· 80g
Unsalted Butter ··· 20g
White Chocolate ··· 20g
Matcha Powder ··· 9g
Cake Flour ··· 15g
[Baking Time]
180℃/356℉ for 15 minutes + 130℃/266℉ for 40 minutes
[Preparation Steps]
① First, refrigerate the egg whites, mix the cream cheese and hot milk until smooth; if there are any lumps, you can continue to heat and stir.
② Heat and melt the unsalted butter and white chocolate, stir in the matcha powder until well mixed, and pour into the mixture from step one, combining evenly.
③ Pour in the egg yolks and cake flour, stir until well mixed, then sift and set aside.
④ Whip the egg whites and add the sugar, whisking until they form soft peaks, then gradually mix with the cheese mixture until smooth.
⑤ Pour into a 12cm diameter mold lined with parchment paper; if using a springform pan, wrap with foil to prevent water from getting in.
⑥ Place in a deep baking pan filled with hot water, and bake in a water bath at 180℃/356℉ for 15 minutes to color the top, then reduce the temperature to 130℃/266℉ and bake for around 40 minutes until fully cooked. Remove from the oven when done.
⑦ Once out of the oven, you can remove it from the mold, let it cool, and enjoy it or refrigerate overnight!

Blueberry Cheesecake Cloud Pie | No Bake | Tiffany's Grub Box
Cloud pie is an old timey recipe that usually consists of dumping a pack of store bought Jell-O into heavy cream... Let's elevate it and make it our own and blueberry-ie!

Layer 1: Crust
Combine
2 cups Graham Crust
4 tbsp Butter, melted
press into a food mold or a spring form pan that has been lined with parchment paper.
Layer 2: Blueberry Cheesecake
Combine
1 pack room temperature Cream Cheese
1 cup Powdered Sugar
1 tsp Vanilla Extract
2 tbsp Blueberry Juice
Blend using hand mixer
Once cream cheese mixer is smooth and lump free, add in
1 cup Heavy Cream
Blend until thick. With a spatula, fold in
1 cup Blueberries
I used fresh, thaw blueberries if using frozen ones (may change colour of mixture).
Add to crust, don't flatten, the ridges will give the pie a wavy pattern that's quite nice. Let set in fridge a couple of hours.
Layer 3: Cloud Pie
In a small sauce pan, heat up
1 cup Blueberry Juice
Pour into a small bowl, add in
1 packet Gelatin made to box specification.
Let set about 1 hour in fridge until cool and somewhat set (it'll still be runny)
In a large bowl, add
2 cups Heavy Cream
5 tbsp Powdered Sugar
to soft peaks
Fold cream and juice mix together, add
Couple drops of Blue Food Colouring (optional)
Pour onto the set cheesecake.
You can either add blueberries to the cloud mix or add some on top.
Place in fridge for at least 4 hours or overnight.
Finally:
Remove from mold and remove paper from sides.
I decorated mine with reserved whipped cream and blueberries.
Cut and serve (it's a bit difficult to get out, you might want to place back in fridge after the paper is removed for another hour to stiffen it up).
This will hold up for several days in the fridge.

Bake in a pre heated Oven 350°F for 14-18 minutes...
