margarine, or butter, melted

coconut

pecans, broken pieces, toasted
1/4
teaspoon
cinnamon, ground
1/4
teaspoon
coconut flavoring
1/4
teaspoon
vanilla
1
coconut, toasted, optional
Directions:
In a 3-1/2 quart slow cooker, combine potatoes, sugar, margarine, coconut, pecans and cinnamon. Cover; cook on Low for 6 to 8 hours or on HIGH for 3 to 4 hours. Stir in coconut flavoring and vanilla. Sprinkle with toasted coconut if desired.

Ginger Sweet Potato Coconut Milk Stew with Lentils & Kale
A super flavourful pot of vegan goodness. This ginger sweet potato coconut milk stew is HEARTY. We use lots of chili and ginger in this stew, along with a bunch of other spices. The flavour profile, spice combination, and recipe itself is inspired by Indian cuisine as well as Thai coconut milk-based curries. You get sweetness, spice, earthy qualities, creaminess, texture from the lentils, and a squeeze of lime rounds everything out.
You start by sautéing onions, garlic, ginger, and spices. Then, cubed sweet potatoes and lentils are added. Vegetable stock is poured in and then the stew simmers until the lentils are tender, about 30 minutes. Pour in your coconut milk and cook the kale until tender. I like to finish this with fresh lime juice and chopped cilantro.

Cook the potatoes ahead of time to speed up the process ????
Oven temp -350f roast the potatoes for 1-2 hours
Then bake casserole for 25 minutes
Then another 5-8 minutes after adding the marshmallows
Ingredients:
3 lbs orange sweet potatoes
4-5 tbsp brown sugar
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla
1/4 cup heavy cream
1/4 cup melted unsalted butter
2 eggs
For the pecan streusel topping
1/4 cup brown sugar
1/4 cup APF
1/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 tsp ground cinnamon
1/4 cup melted butter
Mini Marshmallows to top it off!!!!

OLD SCHOOL SWEET POTATO PECAN PIE ???? (HAPPY THANKSGIVING)
This is a pie i have been working on for about 18 months
i wanted to develop a pie that tasted exact like a sweet potato pie and a pecan pie and had the crispy crunchy flavorful topping and the creamy smooth sweet potato filling
This is the final i came up with and im excited to share it with y'all
RECIPE FOR THE SWEET POTATO PIE:
2 eggs
2 cups mashed sweet potatoes
1 1/4 cups evaporated milk
1/2 cup sugar
1/3 cup packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 tablespoons vanilla
4 oz melted butter
One 9-inch slightly par baked
Preheat the oven to 375 degrees.
In a large mixing bowl, beat the eggs. Add the mashed sweet potatoes, evaporated milk, butter , vanilla both sugars, cinnamon, and salt. Beat to combine, 1 to 2 minutes.
RECIPE FOR PECAN TOPPING:
4 TBSP. STICK BUTTER
1/2 CUP BROWN SUGAR
2 TBSP. FLOUR
1/4 CUP CHOPPED PECANS
1/4 CUP PECAN HALVES
Use a pastry fork or spoon and blend the butter, brown sugar and flour well. Blend until it is crumbly and consistent in texture. separate the mixture in 2 small bowls Add chopped pecans and mix well in one bowl
in the other bowl add pecan halves and mix well
Sprinkle pecan pieces and then place pecan halves on potato mixture and bake at 350 degrees until set. About 40-45 minutes.
