How To make Coffee Shortbread Cookies
1 1/2 Tablespoons Instant Coffee
1 Tablespoon Boiling Water
1 Cup (2 Sticks) Unsalted Butter -- At Room
Temperature 1 Teaspoon Vanilla Extract
1 1/3 Cups Unbleached All-Purpose Flour
2/3 Cup Confectioners' Sugar, Plus Extra For
Dredging (Optional) 2 Tablespoons Cornstarch
1/4 Teaspoon Salt
1/8 Teaspoon Ground Cinnamon
Put the coffee in a small custard cup or ramekin. Pour the boiling water out of the kettle into your measuring spoon, then immediately pour it over the coffee. Stir with a spoon to dissolve the coffee. Cool for 5 minutes.
In a bowl, cream the butter with the vanilla extract. Blend in the dissolved coffee.
In another bowl, sift together the remaining ingredients (except optional confectioners' sugar). Blend the dry mix, about one-third at a time, into the butter until evenly mixed.
Divide the dough in half. Place each half on a sheet of wax paper and shape into cylinders about 1 1/2 inches in diameter. Wrap them up in the wax paper and refrigerate for at least 2 hours, or up to 2 days. You can also overwrap the dough in a plastic bag and freeze for up to 2 months; thaw overnight in the refrigerator.
When you're ready to bake, preheat the oven to 325 degrees F. Using a serrated knife, slice the cookies about 1/4 to 1/3 inch thick and place them on ungreased baking sheets. Bake for 25 minutes, or until the tops feel firm to the touch.
Transfer the cookies to a rack and cool to room temperature. Dredge the cooled cookies in confectioners' sugar if you like. Store in an airtight container.

SCOTTISH SHORTBREAD RECIPE
320g or 2 -2.5 CUPS AP FLOUR
110g or 1/2 CUP WHITE RICE FLOUR
110g or 1/2 CUP SUGAR
220g or 2 STICKS COLD BUTTER(16 TBSP) (cut into small cubes or grated on box grater)
3g SALT or 1/2 tsp
1. Combine flour, rice flour, butter, sugar, and salt in bowl of stand mixer or in medium mixing bowl
2. Mix on low speed for 3-4 minutes or until butter and flour are pebble like
3. Mix on medium speed for 10 more minutes or about 15 minutes in total or until dough is formed and is clearing the bowl as shown in video.
4. Once mixed, move dough over to half sheet pan lined with parchment paper
5. Press shortbread dough into a rough 9x7 or 20x17cm rectangle (roughly)
6. If you'd like perfect rectangles, perforate as shown in video, then score with fork
7. Bake at 275F or 135C for 45 mins to 75 mins depending on how crunchy you'd like.
45 mins will be soft and light, 75 mins will be crunchy and golden.
8. Take out and let cool 10 mins.
9 Cut along perforations while still hot...serve
CHOCOLATE CHIP SHORTBREAD VARIATION
320g or 2-2.5 CUPS AP FLOUR
110g or 1/2 CUP WHITE RICE FLOUR
55g or 1/4C. SUGAR
55g 0r 1/4C. BROWN SUGAR
3g or 3/4tsp VANILLA EXTRACT
220g or 2 STICKS (16 TBPS) COLD BUTTER (cut into small cubes or grated on box grater)
3g or 1/2 tsp SALT
115g or 4 OZ 70% CACAO CHOCOLATE
Follow recipe as before, add chopped chocolate after dough is clearing bowl.

I tasted the Honolulu Cookies Company’s Mini Bites Chocolate Chip Macadamia Premium Shortbread Cookies I bought from Costco and I fell in love with its tastes. I wanted to make a homemade version of these cookies. In this recipe, I achieve a pretty similar taste and I really enjoyed eating them! I wanted to share this recipe so that you can also enjoy the homemade Premium Shortbread Cookies at home as well.

How To Make Italian Coffee Shortbread Biscuits - Frollini Al Caffè
Italians, we do love a biscuit with our morning coffee.
These frollini are a classic biscuit that I've flavoured with coffee but you can substitute it with cocoa, vanilla or any flavouring you like.
INGREDIENTS (makes 12 large biscuits)
250 gr plain flour
170 gr butter, cut into small pieces & at room temperature
90 gr sugar
1 egg
1 tbsp ground coffee
Juice of 1/2 lemon
Pinch of salt
Icing sugar, for dusting
