This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream – YUM!
HOW TO WHIP EGGS:
INGREDIENTS:
Sponge Cake
- ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
- ½ cup (60 g) cornstarch
- ¼ tsp baking powder
- ¼ tsp salt
- 4 large eggs - whites and yolks separated
- ⅛ tsp white vinegar
- ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
- 1½ tbsp warm water - not boiling
- 2 tsp vanilla essence/extract
- 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
- ½ cup (100 g) white granulated sugar
- ½ cup (110 g) boiling water
Whipping Cream
- 2 cups (375 g) cold whipping cream
- 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
- ½ tsp vanilla essence/extract
- 1 punnet fresh strawberries for decorating - sliced in half

Ingredients:
Prepare Plain Cake:
-Maida (All-purpose flour) 2 Cups (250g)
-Namak (Salt) ½ tsp
-Baking powder 2 tsp
-Doodh (Milk) ¼ Cup
-Instant coffee ½ tsp
-Nurpur Butter unsalted 200g (room temperature)
-Bareek cheeni (Caster sugar) 1 Cup
-Anday (Eggs) 4 (room temperature)
-Vanilla essence ½ tbs
Prepare Coffee Butter Frosting:
-Sugar 2 Cups
-Cream 2 tbs
-Instant coffee 2 tbs
-Nurpur Butter unsalted 150g (room temperature)
-Namak (Salt) 1 pinch
-Vanilla essence ¼ tsp
-Bareek cheeni (Caster sugar) ¼ Cup
-Instant coffee ½ tsp
-Hot water ½ Cup
-Badam (Almonds) chopped
Directions:
Prepare Plain Cake:
-In a bowl,place sifter,add all-purpose flour,salt,baking powder,sift all dry ingredients together then mix well & set aside.
-In milk,add instant coffee,whisk well & set aside.
-In a bowl,add butter & beat until fluffy.
-Add caster sugar & beat again.
-Add eggs,one by one & beat after each addition.
-Add half quantity of dry ingredients & beat on low speed.
-Add prepared coffee milk,vanilla essence & beat again.
-Add remaining dry ingredients and beat on low speed until well combined.
-Grease 9” inch baking pan with butter and line with butter paper.
-Pour cake batter on greased baking pan and tap few times.
-Bake in preheated oven at 180C for 40 minutes.
-Take out cake from the oven & let it cool on a wire rack.
Prepare Coffee Butter Frosting:
-In a spice mill,add sugar and grind to make a powder then sift & set aside.
-In a bowl,add cream,instant coffee,whisk well & set aside.
-In a bowl,add butter & beat until it changes color.
-Gradually add powdered sugar,salt & beat well.
-Add cream & coffee mixture,vanilla essence & beat until well combined then transfer to a piping bag.
-In a small jug,add caster sugar,instant coffee,hot water,mix well & set aside.
-Trim a thin layer from the top of sponge cake with a serrated knife and then horizontally cut a layer of cake.
-Place first layer of cake on a cake stand,add coffee syrup,add & spread coffee butter frosting,almonds and place top layer of cake over it.
-Add & spread coffee syrup and coffee butter frosting & frost the outside of the cake with coffee butter frosting.
-Apply chopped almonds on the sides of the cake.
-Refrigerate until chilled.
-Cut into desired slices & serve!
No-Bake Triple Chocolate Mousse Cake Recipe
This triple chocolate mousse cake is rich, chocolaty and decadent, hardly not to fall in love with it from the first bite. Three airy layers of chocolate goodness on top of an Oreo crust, is simply hard to resist.

Ingredients
Makes about 12 servings
Oreo Crust
7 oz (200g) oreo cookies
4 tbsp (60g) butter, melted
Dark Chocolate Mousse
5 oz (150g) semi-sweet chocolate
1/2 cup (120g) whipping cream
2/3 cup (160g) whipping cream (35% fat), chilled
1 tsp (4g) gelatin powder
1 tbsp +1 tsp (20ml) cold water
Milk Chocolate Mousse
5 oz (150g) milk chocolate
1/2 cup (120g) whipping cream
2/3 cup (160g) whipping cream (35% fat), chilled
1 tsp (4g) gelatin powder
1 tbsp +1 tsp (20ml) cold water
White Chocolate Mousse
5 oz (150g) white chocolate
1/2 cup (120g) whipping cream
2/3 cup (160g) whipping cream (35% fat), chilled
1 tsp (4g) gelatin powder
1 tbsp +1 tsp (20ml) cold water
For decorating (optional)
Cocoa powder
Fresh berries
1. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened.
2. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared.
3. Prepare dark chocolate mousse. In a heat proof bowl add the semi-sweet chocolate and 1/2 cup (120g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature.
4. Whip the remaining 2/3 cup (160g) cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined.
5. Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse.
6. Repeat the same steps for preparing the milk and white chocolate mousse layers.
7. Refrigerate the cake for 4 hours or overnight to set.
8. Run a knife around the edges of the cake to remove the sides of the pan.
9. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries if desired. Enjoy!

Flourless Moist Chocolate Cake / Gluten Free / No Flour
Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml
120g dark chocolate (1 cup)
30g unsalted butter (2 tbsp)
30ml milk (2 tbsp)
4 egg whites
a pinch of salt
50g sugar (4 tbsp)
4 egg yolks
1 tsp vanilla extract (5ml)
Bake at 170C for about 20 minutes
Chocolate Cream Filling
150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
90g heavy cream (1/3 cup)
300g cold heavy cream (1 1/4 cup)
30g sugar (2.5 tbsp)
Cocoa Syrup
75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
2 tbsp sugar (25g)
Mix to dissolve and let it cool down completely
Chocolate Glaze
50g cocoa powder (1/2 cup)
115g sugar (1/2 cup + 1 tbsp)
85ml water (1/3 cup)
85g heavy cream (1/3 cup)
1 tbsp gelatine powder (9g)
3 tbsp cold water to bloom gelatine (45ml)
