How To make Corn Chili
4 plump ears of corn
5 Ancho chilies, -- stems removed, seeded
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon ground Mexican oregano
2 tablespoons corn oil
1 large onion, finely diced
4 garlic clove minced
1 12-ounce bottle Mexican beer
3/4 cup chicken stock
Salt Lime juice
Cut kernels from corn cobs and set aside; you should have 2 cups of whole kernels. With the back of a knife, scrape down cobs to remove liquid and pulp. Reserve in a small bowl; you should have a 1/2 cup of corn puree.
Soak chilies in hot water to cover until soft. Drain, reserving soaking liquid. In a blender combine chilies, cumin, coriander, oregano and tortillas. Blend, adding just enough reserved
chile liquid to make a thick paste. Heat oil in a saucepan over medium-high heat. Pour in chile paste and fry for about 3 minutes, or until it thickens. Add onion, garlic and corn kernels and fry
2 minutes more. Add corn puree, beer and chicken stock. Bring to a boil, and simmer for 40 minutes, or until mixture is thick and flavorful. Season to taste with salt and lime juice

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Ingredients for Crispy Sweet corn
Sweet corn (स्वीट कॉर्न ) - 1 cup
Corn flour (कॉर्न फ्लार ) - 2 tbsp
Salt (नमक ) - 1/2 tsp
Red chili powder (लाल मिर्च पाउडर ) - 1/2 tsp
Oil (तेल ) - for frying
For Serving
Green chili (हरी मिर्च ) - 2 (finely chopped)
Green coriander (हरा धनिया ) - 1 to 2 tbsp (finely chopped)
Lemon (नींबू ) - 1/2 or 1 tsp lemon juice
How to make Crispy Sweet corn :
1. Take a vessel, fill with 2 cups water.Turn on flame. Let the water boil.Put the sweet corn to boil in water for 5 to 6 minutes.
2. Take it out from water.Put it in the sieve. Keep in bowl.
3. Add cornflour, red chili powder, salt. Mix all ingredients well, till sweet corn is coated. If it is still powdery, then add 1/2 or 1 tsp water.
4. Heat oil in wok. Once rightly hot, put the sweetcorn to fry.Spread it with a laddle. Keep the flame low medium and Roast sweetcorn for 3 minutes. Gradually increase flame. Keep check on it. Cover the wok.
5. To take out the sweetcorn, Take an extra sieve, take out sweet corn, hold it on the edge of the wok. Meanwhile reduce flame, keep fried sweet corns in a plate. It takes 5 minutes to fry sweetcorn once.
6. For garnishing, take finely chopped green chili, green coriander, Add black pepper or dry mango powder. Add a little lemon juice to it. Mix all ingredients well.
Serving :
7. Crispy sweet corn are ready to be served. You can serve it as an appetizer at a party or just munch on it.
